Shepherd's Pie Complete

Very good and easy. I made a couple of minor adjustments. I used one pound of ground beef and used real mashed potatoes instead of flakes because we like real mashed potatoes better, but I understand that flakes are a time saver for some. Also, I added a can of cream of mushroom soup instead of the gravy. One can was plenty because I only used 1 lb. of ground beef. I also added a few dashes of Worcestershire sauce for added flavor. This helped! The taste was great!

No Bake Cookies V

This is the recipe my mom made when I was a kid. I had lost it and so glad to have found it again. I made them exactly as the recipe states and they turned out perfectly. The absolute key to the success of the cookies is to begin timing only after the mixture has come to a rolling boil.

Salisbury Steak

We really liked this. I took others' advice and doubled the gravy recipe and so glad I did. I baked it in the oven after browning. I also added a a packet of brown gravy mix. I forgot the Worcestershire sauce, but don't know if that made any difference. The only complaint I have is that there was quite a bit of grease in the gravy. I will probably choose leaner ground beef next time.

Green Chicken Enchilada

Very easy and surprisingly tasty. I was afraid that they would be bland because of only having chicken and cheese on the inside, but that was not an issue at all. The enchilada sauce gave them great flavor. I took others' advice and used rotisserie chicken and heated the tortillas before working with them. Otherwise, I followed the recipe exactly.

Spinach and Rice Alfredo

This was great! I made a few minor modifications. First, I cooked the rice in vegetable stock for more flavor. Then, I sauteed chopped onion and sliced zucchini along with the garlic. I added 2% milk instead of cream, and it was still rich and wonderful. We will make this often!

Famous Butter Chicken

This was good, but very rich. I used other reviewers' recommendations-- pounded the chicken to 1/4" thickness, added garlic salt and pepper, decreased butter to 1/4 cup, and sprayed pans with PAM. Will make again.

Baked Teriyaki Chicken

I thought this was just ok. I like my teriyaki a bit sweeter- this just tasted like fancy soy sauce. I didn't try making it with more sugar because I don't know what the extra sugar will do to the consistency, so I'll keep looking.

Apple Cake V

I thought this recipe was ok, but somewhat bland. I used most of the recommendations of other reviewers, including substituting apple sauce for much of the oil and adding 2 tsp. of apple pie spice. I think that must have helped- I can't imagine how bland it would be without the apple pie spice (or the other spices recommended). I'll probably keep looking for an apple cake recipe.

Oven Baked BBQ Ribs

The taste and tenderness of these was excellent as everyone says. I gave it four stars because I had problems with my ribs burning in the oven. The recipe doesn't say that the pans should be covered, but I think they should be (I covered with foil after an hour). Also, after the first hour and a half, I decreased the oven temp to 300 degrees. They were still done in three hours and were perfectly tender. Next time I will probably bake at 300 degrees for 4 hours and cover them. I also rubbed the ribs with crushed garlic after I seared them.

Three Cheese Garlic Scalloped Potatoes

We thought this was ok. My boyfriend liked it more than I did, thus three stars vs. two. It was greasy. I never thought there was such a thing as too much cheese, but this had too much cheese which made it greasy, I believe. I solved the cooking time problem by microwaving the potatoes for five minutes after I sliced them. This cut the oven cooking time considerably. I cooked it for about 1 hour and 15 min.

This was good. I might try increasing the apricot nectar and decreasing the pineapple juice and lemon lime soda next time. I couldn't really taste the apricot. But, it is a gorgeous golden color, especially for fall. I made an ice ring out of apricot nectar, and put marishino cherries in the bottom of the ring for extra color. Beautiful!

Bar-B-Q

This was as good as others said it was. The only problem is that I found it to be a little more runny than I would have liked, even after simmering for a few hours. I remied this by adding 1/8 cup or so of flour. Next time I'll cut down on the water. Also, after I browned the ground beef and added the ingredients, I put it in the crock pot to simmer for several hours.
