Chicken in Savory Lemon Sauce
This was pretty good and talk about easy. Mind you, I didn't even use the pepper because I didn't have any. I think a required ingredient though. I used dried parsley and bottled lemon juice. I can't wait to make it again using the exact called for ingredients!! Also may add some finely chopped shallots. Too easy I tell ya.

Beef and Bean Chimichangas
These were fabulous. I used red bell pepper instead of green which was so good. I also cut down the corn because that was all I had. The only trouble I had was wrapping the tortilla. It kept breaking when I rolled it. I must have been doing something wrong. These are very big! One is more than enough per person. I only made three and after putting them in the oven found myself eating spoonfuls of the meat mixture on it's own saying mmmm, mmmm, after each bite. I loved this mixture. I think next time though I will use soft tortilla's like a burrito or even as soft taco. The spices gave it perfect flavor. For the reviewers who said this was bland.............you must have missed something in the recipe. This was packed with flavor. I used a medium/hot taco sauce, maybe that made the difference.

Chicken Marsala
Absolutely Delicious!!! The chicken was so tender and tasty. I doubled the mushrooms and the wine to serve over angel hair. I will add flour and parmesan cheese to the mix next time. My boyfriend was impressed. He asked if I could make it weekly!!!
