Spring Risotto
This is not the fastest of all side dishes, but the medley of flavors is wonderful in this recipe. As all other risotto recipes I've tried, it takes a lot of attention and preparation. However, if you pre-chop everything and have it all ready to go, assembly is not difficult. I used orange pepper instead of red and vegatable boullion in cubes mixed with water, and it turned out nicely. A nice, springy dish... I fixed it with Robust Baked Garlic Chicken and it went together very well.

Robust Garlic Baked Chicken
This recipe is wonderful, and as easy as baking a chicken normally is. It is nice, due to the nice medley of fresh herbs and lemon. One note, I didn't add all the butter mixture to the chicken, as it was quite a lot. Half of the mixture (with the full amount of herbs, just half the butter) works wonderfully as well. Or make the full batch, and use the rest of the herb butter for bread, etc. Additionally, I did not have kitchen twine, and so used dental floss (clean, of course!) and it worked perfectly! Not the quickest of recipes, it is a crowd pleaser.

Spinach Quiche
This quiche is really easy to make, although a little time consuming. I really liked that it make more than one quiche, so I could freeze the extra one for later use. I made this recipe for my co-workers, and I received nothing but compliments. One suggestion I have is to use more eggs, as I found only 4 eggs does not fill up two pie crusts. I would suggest 6 or 7 eggs total. Otherwise, I also like this recipe since it is easy to add or subtract ingredients as well. I added 1/2 lb cooked bacon to the recipe and it made for a nice addition. Perhaps the best part... the finished product looks impressive, but it's very easy!
