Key Lime Pie VII
delicious. Use 2 cans sweetened condensed milk instead (read reviews) instead of measuring 3 cups. I used light sour cream, 1 cup key lime juice (makes it more tart), no lime zest, and a couple drops of green food coloring. Otherwise it's just as written and it's delicious!! You MUST use key lime juice NOT lime juice. It makes more than one pie if you use the little metal pans and make your own crust. When I doubled it, it made two pie pans and one 8x8 pan.
I had to cook it longer (homemade thicker crust I think), but do NOT let it brown. When the edges start to look shiny and it has thickened some that's when it's done. It will thicken after it's chilled. I never had the bubbles pop on the top (the recipe says to look for bubbles), so I just watched it like a hawk.
