About this Cook
I am a full blooded Italian, 2nd generation American. Very family orientated my children being my first priority along with my husband. I come from a large traditional Italian family very close - but also competitive when it comes to cooking and growing tomatoes!

AUTHENTIC Italian foods (passed on through my family heritage) Kids party foods, cakes etc. Any cakes, pastries, cookies etc. Veggies
My favorite family cooking traditions
Our Italian Christmas Eve with the 7 fishes with our own tradition added in where the little ones make something to bring to the baby Jesus (hidden outside somewhere) as they find Him like the 3 kings did.
My cooking triumphs
My manicotti - even my own sisters (and sister in-laws) have to admit it's the best. I make my own crepe's New York Style Cheesecake - I've never seen a recipe on line that is quite like this - straight from a family friend/restaurant owner on Arthur Ave. in NY
My cooking tragedies
I burnt the tomato sauce big time last year when I had my family (50 people) over for one of my daughters birthday. I once accidentally put salt instead of sugar in a batch of cookies

German Potato Pancakes
this is the exact same recipe my great grandmother from Ukrania used to make. Only one additional suggestion. Once potatoes are grated squeeze out excess water either using a cheese cloth or 3 paper towels work well too. The latkes will cook better without the excess water. Made them for one daughters preschool class and the others kindergarten class. Both were great successes. We either have them with sour cream or applesauce.

Scott Ure's Clams And Garlic
A great recipe! We use this recipe along with some variations. We live by ocean and often go claming when we go out on the boat. So the cost is not a factor but if I had to buy them - always in the shell fresh garlic is also a must. In addition to the broth we melt butter with a little lemon and FRESH garlic (always a must in any recipe) and dunk the clams in the butter mixture as well (sort of like you do with lobster). Cooked Bacon is also a nice added flavor. We actually have to stop our 3 year old from eating too many!

Anniversary Chicken I
I cubed the chicken instead of whole chicken breasts, "browned" the cubes and followed the rest of the recipe as it is. My 4 year old daughter - queen of the fusspots - HATES chicken - LOVES this even has seconds! AWESOME!
