Guacamole
Made this for my husband and he loved it! I don"t like avocado, but he told me I had to try it. I did ... and ended up eating half of it!! We polished the whole thing off in less than 30 minutes! lol. For me to eat ANYTHING with avocado in it is a pure, unadulterated miracle! ha ha. Excellent! I totally recommend this recipe. =D

Spaghetti Squash Primavera
This was excellent! From reading the other reviews, it seems quite versatile as well. I used a rather large spaghetti squash so it took 17 minutes in the microwave, but it came out perfectly. I substituted red bell pepper for the green, used a whole small onion, one zucchini and 2 cloves of garlic. I mixed the garlic with the onion and cooked them together on low for about five minutes while I cut up the bell pepper and zucchini. I then added those to the pan and let that cook while I chopped 3 Roma tomatoes. Threw those in, added the seasonings plus fresh basil. Also added red pepper flakes and Tony Chachere's Original Cajun seasoning. Left out the cheese but added about 1/2 cup of tomato sauce that I had in the fridge. OMG, it was DELICIOUS! I couldn't stop eating it. Hubby and son loved it too. Great recipe!

Crustless Cheese Quiche
Excellent! Someone said you ca'tn mess up with this recipe. It's TRUE!! I made it with ALMOND MILK because I can't do cow's milk. I used Colby Jack cheese and Gouda because that was all I had on hand. Taking someone else's suggestion, I sauteed green pepper, onions, garlic, sun-dried tomatoes and spinach. Also added bacon. I was really worried about how the flavor of almond milk would affect the quiche. No problem Came out great! Will be making this again, but I think I'll try goat's milk next time. =) Bon Appetit!
