Kicked Up Mac and Cheese

Delicious! I switched a few ingredients since I didn't have them on hand, but the end result was definitely a spicier version of mac and cheese and I loved it! So much better than the bland versions and I'll definitely make it again.

Escarole and Beans

Delicious! I only used one head of escarole, cooked it, and then I added the beans to it. Great flavor and I will definitely make this again.

Annie's Fruit Salsa and Cinnamon Chips

Absolutely delicious. I put in blueberries instead of raspberries and skipped the bananas. I used Fuji apples and Red Raspberry preserves. I also cut back on both the sugar and the preserves, using about half of what it called for. I also only used one apple. The tortillas were incredibly easy to make and a huge hit at the party I took them to. Everyone wanted to know how I made them and what I used. All in all, delicious and a big hit!

Crab Ceviche

Absolutely delicious. I left out the tomatoes because I'm not a fan, but my husband and I both loved this. It was incredibly easy to put together and tasted great an hour later and a few days later. Yum!

Fried Rice with Ginger, Hoisin, and Sesame

My husband took one bite of this and refused to eat anymore. I think that if I made it again, I wouldn't use most of the ingredients in teh sauce, just use Hoisin instead.

Meatball Soup

Good recipe. I used extra meatballs and extra macaroni to beef it up a little bit. Next time I think that I would add more vegetables and maybe one more can of tomato sauce. But it was delicious and easy and I will definitely be making this again!

Make-Ahead Spinach Manicotti

Absolutely delicious. I was a little worried about not cooking the noodles before, but it turned out perfectly. Rave reviews all around. I also added a little pesto sauce to the filling and used a sauce with pesto and spicy tomato.

Vegan Bean Taco Filling

Delicious! There was only two of us, so I only used one can of beans, added a little hot sauce, and left out the peppers because I was feeling lazy. And it was really good! My husband and I each had 3 tacos and no leftovers!

Kielbasa Alfredo

Cannellini Bean Salad

Delicious! I used sun-dried tomatoes instead of red peppers, but next time I'm planning to use the red peppers instead. I made it one night and had it for lunch the next day and it was amazing. Can't wait to try it again!
