About this Cook
I'm a mother an 11 y/o and an 8 y/o. And I LOVE everything about food..cooking...eating...talking about it...touching it...looking at it...dreaming about it...it makes me happy!!! My b/f loves food too and is more than happy to sample all of my creations. His daugher lives far from us and she is a diabetic so when she visited us at xmas it presented a whole new cooking challange which I gladly embraced with the help of allrecipes!! I had fun creating diabetic friendly meals that we all enjoyed! My other 2 children both love food too, although one is a little on the 'picky' side. Baking to me, is self-medicating. It's what I find myself doing when I'm stressed/sad/bored/anxious...it always makes me feel better!!!

I love to bake almost anything....sweets...breads...buns.. I really put my heart & soul into it and it's what I seem to be best at.

My mother, sisters and I baking sweets for Christmas....making gingerbread boys & girls with my kids...

My cooking tragedies
i've screwed up a few things...and still do!!! when i was a teenager i made "fried" rice with worchestershire sauce, thinking it would be an adequate subsitute for soy sauce ...afterall, it was the same colour!!! I've had my share of tragedies...homemade pasta being another one...but i'm going to try again soon!! :-)

Linguine with Clams
A reviewer states that the clams will become rubbery if cooked for 20 minutes - if they were fresh clams, this would be true but canned clams are not going to get rubbery from cooking. As a matter of fact because they are already cooked, brined and canned, they will become less rubbery as they absorb more liquid during the cooking process. One reviewer who as acutally made the recipe states this as well. This is a GOOD recipe! I didn't add mushrooms or fresh parsley (used 1 tsp of dried) and it was FABULoUs!! I also added a bit of kosher salt (1/4 tsp) to the clam sauce as it was cooking and LOTS of salt to the pasta water. It was perfect! Don't expect an alfredo style "sauce" that you are going to sop up with bread - that's not what linguine and clams is! If you like REAL linguine and clams -try this recipe and don't be afraid to follow it as written. I will make this again and again - we loved it!

Sweet and Sour Pepper Pork
I followed the sauce recipe as written and it was FABULOUS! I did make changes to other ingredients b/c that is what I had in my kitchen...I used chicken breast instead of pork and a mixture of veggies I had on hand - onions, celery, peppers, baby carrots and it worked very well. I will definitely make this one again!

1-Dish Taco Bake
I reduced yeast to one packet, topped batter with half pound of ground turkey mixed w/half package of taco seasoning then topped with leftover chili, a few sliced jalapenos, bbq corn chips and cheese. This was very good - whole family liked it - a little dry but much better if you top with sour cream!
