About this Cook
I'm a mother an 11 y/o and an 8 y/o. And I LOVE everything about food..cooking...eating...talking about it...touching it...looking at it...dreaming about it...it makes me happy!!! My b/f loves food too and is more than happy to sample all of my creations. His daugher lives far from us and she is a diabetic so when she visited us at xmas it presented a whole new cooking challange which I gladly embraced with the help of allrecipes!! I had fun creating diabetic friendly meals that we all enjoyed! My other 2 children both love food too, although one is a little on the 'picky' side. Baking to me, is self-medicating. It's what I find myself doing when I'm stressed/sad/bored/anxious...it always makes me feel better!!!

I love to bake almost anything....sweets...breads...buns.. I really put my heart & soul into it and it's what I seem to be best at.

My mother, sisters and I baking sweets for Christmas....making gingerbread boys & girls with my kids...

My cooking tragedies
i've screwed up a few things...and still do!!! when i was a teenager i made "fried" rice with worchestershire sauce, thinking it would be an adequate subsitute for soy sauce ...afterall, it was the same colour!!! I've had my share of tragedies...homemade pasta being another one...but i'm going to try again soon!! :-)

Brown Sugar Pie I
Excellent! If you are having problems with the pie setting, make sure you don't just "bring to a boil" as the recipe states - make sure it is a good boil (as in more than 1 or 2 bubbles!). Make sure you stir constantly and you will notice the mixture thickens to almost a pudding consistency and gets a little darker as it begins to boil. I baked it for 10 mins @ 400 on bottom rack, then moved to top rack at 350 for 20 mins. Other than that, followed recipe to a tee. I love the crispy top! =] Manifique!

Super Easy Jelly Doughnuts
OK...these were kinda amazing!! I was home alone this evening...craving donuts...but it was too late to make them. I stumbled upon this recipe and I must admit, I was skeptical when I read it. Then, after reading the first few reviews I decided to give it a try. wow!! am I glad I did! They are AWESOME! they really taste like donuts. I did stray from the recipe slightly, cooking mine between 325 & 350 as they seemed to be cooking too fast on the outside at 375. I then put some white sugar in a bag and gave them a shake when they were done. Of course I couldn't stop at one...I've already eaten 3 and poured a big glass of milk. If you follow the directions, you will not be disappointed with this recipe!

Salmon Dip
Fabulous! I made this with what I had on hand which meant omitting fresh parsley & pimentos. I also forgot to add the butter. I put this in a small casserole, topped with a sprinkle of parm and baked for 15 mins @ 350. It was a delicious hot dip. I used tostito scoops and crostini. Excellent!
