Pasta Salad with Pesto
This is a winner at our house, especially in the summer months. I just buy premade pesto, and I do add some Italian salad dressing.

Mediterranean Greek Salad
This was excellent. I'm unable to locate sun-dried tomatoes in my area so I subbed 1/3 cup sun-dried tomato pesto. I tossed the vegetables together, then added lemon juice, tossed them again, drizzled olive oil, and tossed once again. I used kalamata olives because I had them on hand.
