Spaghetti Squash Dip
Everyone loved it! I added about a tsp of garlic powder and a little salt to add some extra flavor. The 2nd time I made it I used a bag of cheddar/swiss cheese but I liked the Montery Jack better.

German Potato Pancakes
I made the recipe as published and it was great. However I had to cook the pancakes longer to get a deep golden color. Instead of 3 min per side I cooked them 6-8 min per side and they were nice and crispy. They were also great the next morning heated in the toaster oven and served with eggs.

Chilled Cantaloupe Soup
After reading previous reviews I was skeptical of the flavor. I agreed that it needed to be sweeter. I adjusted the recipe by using only half of a large cantaloupe, added about 1/4 cup sugar and 1/2 cup fat free plain yogurt. This made it more like a smoothie and was great with breakfast.
