Cheeseburger Soup II
Not bad. Used peeled cubed potatoes. Simmmered til tender. Added just a tbl or two of sour cream and more broth than milk. Still quite rich.

Cowboy Skillet Casserole
Very good. I used about 1 1/3lb ground round, sml can baked beans (could use larger can) and one chopped red pepper. Did not have onions so used shallots. Used 1 tbl fajita seasoning. Next time I will try Emeril's Essence. Added frozen corn and shredded cheddar jack cheese to the cornbread mix, which another reviewer suggested. Excellent addition!

Baked Spaghetti
Big hit in my house! I used half as much butter and half as much mozarrella cheese with good results. I also used my husband's homemade pasta sauce, which we prefer. Easily enough to feed 6 of us for dinner, with ample leftovers.
