Buttery Soft Pretzels

These were really yummy and not really hard (except for making them look like pretzels, LOL). I think I need to roll them out into longer ropes so they don't end up looking like piles of you-know-what. Which made them a little doughy. But other than that, they were delicious and I will make them again. Probably tomorrow for a games night...

Guacamole

I've made this twice now, and it is really good. It seems salty at first, but do it up several hours ahead and the salt subsides. Perfect the next day! I mis-remembered the recipe while out shopping for ingredients, so I used lemon instead of lime. It works, too.

Biscotti

These biscotti are delicious! I have made the mocha recipe from here a couple of times, and they are good, but these are classic. I did use almond extract instead of the anise since they are at least in part for gifts and I didn't know if the recipients like the taste of licorice. Next time I will add some sliced or chopped almonds for texture. My only complaint is that the dough is extrememly sticky. It stuck to the bowl, my beaters, wooden spoon, everything. Including the wax paper I used as recommended to keep it from sticking to my hands. A little water on my hands did help some, however I might have had a few more cookies if it didn't stick so much. I highly recommend these for taste, though!

Balsamic Marinated Chicken Breasts

I reommend this chicken recipe. It was easy and yummy. I used fresh garlic and omittted the pepper flakes and rosemary since I didn't have any. Also, I used italian seasoning whose main ingredient is oregano instead of plain oregano, since, amazingly enough I didn't have any. My husband who doesn't like vinegar of any kind and rarely comments on my cooking said it was good. Really high praise from him. I have saved this and will make it again for sure. Oh, yeah, and I grilled it instead of baking it.

I liked the simplicity of these. However, when I realized I didn't have any steak sauce, I substituted worchstershire sauce. It was good, but I will be trying this again when I have steak sauce, 'cause that sounds even better!

Connie's Zucchini 'Crab' Cakes

This was good. But is not a substitute for a 'good' crab cake. I was disappointed after reading all the reviews. The texture of the zucchini does not mimic the texture of crab. It is important to drain the zucchini thoroughly before using it in the recipe. I have not decided whether to make this again. Perhaps for a potluck or party.

Peach Pie

This was pretty tasty. And easy, not counting peeling the peaches. Despite someone's recommendation to boil them for 1 min. and plunge into cold water, I still needed to use a vegetable peeler. Also, use small to medium peaches. I had 10 large peaches from Costco and it made 2 pies.

Triple Berry Crisp

This was very good! I scaled it down to 6 servings, which worked great. I served it with vanilla ice cream instead of the whipped cream and that was richly yummy!

Raspberry Peach Crumble

Wow! This is really yummy! And easy, too. That's important to me ;) It was pretty juicy, though, even though I added 1 Tbsp of cornstarch to thicken it up. I will make it again for an easy, warm-you-up treat.

This was OK. It was a lot of prep work, but easy. The taste was kind of bland, though. If I make it again, I'll add some more flavoring. Also rice, couscous or something would have been a good idea, as others have mentioned.

Home Style Macaroni and Cheese

I liked this a lot. It was easy to make and tasty. The cream cheese gave it a creamy taste my hubby couldn't put his finger on (I didn't tell him, since he doesn't like cream cheese) Next time I will probably reduce the amount of breadcrumbs,though. It seemed a little excessive...

Kalua Pig in a Slow Cooker

I made this for a small scale luau, and everyone loved it. I couldn't locate any hawaiian sea salt, and was without a measuring spoon, so I probably didn't use enough salt. However it tasted very good, and the servings were generous!
