Pasta Bean Soup

I loved this very easy recipe. The only change I made was to use vegetable broth instead of chicken broth so my vegetarian daughter could eat it.

Wow! This is really yummy! And easy, too. That's important to me ;) It was pretty juicy, though, even though I added 1 Tbsp of cornstarch to thicken it up. I will make it again for an easy, warm-you-up treat.

Ratatouille

This was OK. It was a lot of prep work, but easy. The taste was kind of bland, though. If I make it again, I'll add some more flavoring. Also rice, couscous or something would have been a good idea, as others have mentioned.

Home Style Macaroni and Cheese

I liked this a lot. It was easy to make and tasty. The cream cheese gave it a creamy taste my hubby couldn't put his finger on (I didn't tell him, since he doesn't like cream cheese) Next time I will probably reduce the amount of breadcrumbs,though. It seemed a little excessive...

Kalua Pig in a Slow Cooker

I made this for a small scale luau, and everyone loved it. I couldn't locate any hawaiian sea salt, and was without a measuring spoon, so I probably didn't use enough salt. However it tasted very good, and the servings were generous!

Apple Crumble Tart

This is a DELICIOUS recipe! I substitued oats for the almonds, since some of my family don't care for nuts. And instead of making the sauce, used a caramel sauce drizzled over it. Yumm! This is bound to be a family favorite.

Dad's Steak Rub

I thought this looked intriguing, so I tried it. I felt it called for way too much pepper, though, so I halved it. (I'm not a pepper person) It was very good!

Mocha Biscotti

I personally liked the level of the coffee flavor in the original recipe. The only thing I had a problem with was the chocolate to be drizzled on top. I've made this recipe twice now, and the chocolate never "drizzles". Perhaps I need some advice on melting it...

Easy Broccoli Quiche

This was good. Not as easy as I'd hoped, but not exactly hard. Next time I would reduce the pepper by half, since I found it a little spicy for my taste. However, I'm not a spicy food lover in general, so take that with a grain of salt (or pepper--hehe). Also, it may have been my oven, but I had to cook it an extra 10 minutes before the filling was set.

Green Bean Blue Cheese Salad

This salad was pretty good. However, I agree it would be better to use less oil and vinegar. I loved the combination of pecans and bleu cheese.

Roasted Rack of Lamb

My hubby and I both loved this recipe. The only thing I would do next time (and there WILL be a next time)is reduce the salt-perhaps not season the rack itself with salt...Thanks for the recipe!

Floating Island Punch
