Slow Cooker Italian Beef for Sandwiches
My husband is from Chicago and was very skeptical that I could make him a "real" Italian beef sandwich. When he tasted this, his whole face lit up. He LOVED it. I used 2 cans of beef broth instead of water, and a 2.75 pound roast. Instead of shredding I sliced the meat as thin as I could and then returned it to the liquid. I thinly sliced half a red and half a green pepper and added it to the meat and cooked until the peppers were done. It turned out just about perfect for him - the only thing keeping it from being absolutely perfect was that I couldn't slice the meat thin enough by hand.
