About this Cook
I love cooking from scratch! However, I am not opposed to whipping up a few quick and easy meals during the busy work week... I started learning how to cook at the tender age of 10 - when my parents divorced and dad had custody. He only knew how to cook two things: meatloaf or (Americanized) goulash! If we weren't having one, we were having the other... After my siblings and I had to endure this for several weeks, I took it upon myself to learn how to cook. I burnt a few meals in the learning process, but these days when I host a dinner party or holiday meal, I usually have a 100% positive RSVP's.
My favorite things to cook
Roasted chicken, grilled steaks, pasta dishes, one-pot meals
My favorite family cooking traditions
Grandma's cream gravy, Grandpa's "scrambled" eggs
My cooking triumphs
Oxtail stew with portabello mushrooms, homemade pumpkin pie (friend from Phoenix, AZ always requests this), cream of potato soup (friend from OK always requests this), BBQ brisket
My cooking tragedies
Way too much onion in a homemade spaghetti sauce :(

Basil Pork Chops
The only thing I changed was the oil. We don't use vegetable oil because it's "soybean". We use either coconut or EVOO. I used coconut oil this evening. Other than that, I made as directed. It's a definite keeper for our family! Thanks!

Smoked Salmon Chowder
Loved this! Recipe as shown definitely makes far more than 6 servings tho'. Filled my 5qt dutch oven to the brim. Didn't have fish stock, so used chicken stock. Next time will plan to have fish stock and am betting it will be even better yet. Used the white wine - tasted it without, it was still good but... added it in? Huge difference, for the better!

Easy Slow Cooker French Dip
I made this just last week for the first time! All I can say is YUMMY YUMMY YUMMY and triply so on the encore (leftovers) a couple of days later when the beef had a chance to soak up more flavor from the sauce!!!! It was a huge hit in our house. So much so that my (mostly vegetarian) son asked me to make this for an upcoming Cub Scout Blue & Gold Banquet!! I also made some changes based upon reviews: dash of worcestershire sauce, garlic powder, onion powder, dash of hot sauce. This second time around, I'm going to add some Better Than Bouillon Beef Base for a bit more beefy punch. Oh so delish and hitting the top 10 of meals to make!!
