About this Cook
I love cooking from scratch! However, I am not opposed to whipping up a few quick and easy meals during the busy work week... I started learning how to cook at the tender age of 10 - when my parents divorced and dad had custody. He only knew how to cook two things: meatloaf or (Americanized) goulash! If we weren't having one, we were having the other... After my siblings and I had to endure this for several weeks, I took it upon myself to learn how to cook. I burnt a few meals in the learning process, but these days when I host a dinner party or holiday meal, I usually have a 100% positive RSVP's.

Simple Beef Stroganoff
I made this using left over roast beef and fresh garlic. It was good and I'll be making it again in the future.

Creamy Smoked Salmon Pasta
New family fav! My 6yr old and hubby went for seconds!! I had bought several fresh-made flavors of smoked salmon from a fish market the other day. Wasn't sure what I was going to do with it, so I surfed in here and found this recipe. Instead of the "lighter" version, I had heavy cream on hand that needed to be used up. Also I used minced garlic instead of powder... and I thought I had frozen peas on hand, but didn't - which was a bummer! However, I did have fresh spinach and to add color contrast, I chopped that up to toss in it. YUMMY!

White Chicken Enchilada Slow-Cooker Casserole
YUMMY!!! New family fav. Made this last week, only change I made was using white corn tortillas as opposed to the flour. Now, I boo-booed and forgot to plug in my slow-cooker. By the time I realized my mistake, it was too late to expect it for dinner that evening, so I put in the fridge for the next evening's meal. Held over well. Would most definitely recommend!!
