Bacon and Tomato Cups

These are really good. I took a few shortcuts and used a package of "real" bacon bits, a can of rotel tomatoes and mini Filo shells. Delicious - would make them again

Too Much Chocolate Cake

I made this for my co-workers and they all really liked it. It was VERY chocolaty as you can well see from the ingredients. I topped it with the "Satiny Chocolate Glaze" also on this site.

Satiny Chocolate Glaze

This was very good - I've never used butter in a glaze before but liked it. I don't have a double boiler so just melted on lowest temp and kept a constant eye on it - it came out great and was perfect over the "Too Much Chocolate Cake" recipe that is also on this site.

Dawn's Easy Red Velvet Sandwich Cookies

These were a HIT at my office. They were gobbled up in about 30 seconds! I left the bourbon, coconut & pecans out. Next time I may make 1/2 with pecans and 1/2 without. Also, I used regular milk instead of evaporated (just because I didn't want to open a whole can for 2 tsp.) I'm making them again this week!

Southern Pimento Cheese

This is exactly the way I've always made Pimento Cheese (minus the jalepeno). I took some to work once and 4 people told me it was the best they've ever had. Yum!

Mack's Tunaburgers

This was pretty good. I love tuna and can eat it everyday so I like to find different ways to make it. I will make this again but I will cut back on the teriyaki sauce a little bit. Although I like teriyaki sauce, I thought it was a little overpowering for my taste.

Watermelon Cookie

These cookies were a big hit !!! They are so cute and taste good too. Although I think next time, I might sprinkle a little bit of sugar on them before baking to give them that "sugar cookie" taste. I didn't follow the directions as written. Instead, I colored 1/4 of the dough green and the rest red. I then shaped the red into a log with a flat bottom, rolled out the green and covered the red log with a thin layer of the green - then refrigerated the log. The next morning, I just sliced the cookies, added the chips and baked - very easy!

Pasta with Fresh Tomatoes and Corn

I have been looking for a recipe like this for a long time. We have go to a resturant that has corn and tomato linguini and I wanted to make it at home. This fits the bill perfectly. I left out the scallions (personal taste) - I will make this often !!

Black Bean Vegetable Soup

This was very good - I think next time I will add a little more cumin (because I like it). I didn't have a food processor/blender so I couldn't really puree part of it properly (I used a handheld mixer). It was very filling and I served it with a little fat free sour cream - I am adding this to my recipe box.

Broiled Tilapia Parmesan

Oh my goodness !! This recipe sure lives up to its rating. I have been wanting to try this for a long time and my only regret is I didn't try it sooner. I sprinkled the fish with little bit of Old Bay before putting on the spread (as another person suggested). I served it with herb/butter rice and steamed broccoli. It is delicious!!

Black Bean Salsa

I have been looking for a salsa recipe like this - so good! I made a few changes based on other's reviews. I added fresh juice from one lime and used regular canned corn. I also used all canned tomatoes (used regular because I don't like it too spicy). Be careful not to drain your tomatoes too much (I should have reserved a little extra juice). I'm looking forward to trying this with fresh tomatoes when they are in season.

Cheater Pot Pie

This was very good and super easy. I substituted cream of chicken and herbs for regular cream of chicken and I realized (while it was baking) that I forgot to add the milk. It didn't matter though, it was still very creamy and good. I sprinkled a little cheese on top and some italian seasoning (for color). I'm saving in my recipe box because I will make this again.

Asian Tuna Patties

I really enjoyed these. I have been looking for a tuna patty recipe that did not have mayo as an ingredient. I used low sodium soy & teriyaki sauces and served it with teriyaki rice. I didn't have cornmeal and it was fine without it. I will make these again.

Blue Cheese Chicken Wing Dip

This dip is ADDICTIVE! I did not add the butter and served it with "chicken in a biscuit" crackers. If you like hot wings, you will LOVE this !!

Marie's Easy Slow Cooker Pot Roast

This was very good - I had guests on New Year's Eve and needed a recipe that did not have any cream soup (due to one guest's dairy allergies). I didn't want an Italian type pot roast - this was just good old fashioned goodness. My guests loved it. I took the advice of other reviewers and used beef broth instead of water and mushrooms instead of celery. This was my first attempt at making pot roast - I will make again.

Best Ever Cheese Fudge

I was very skeptical about trying this but found it to interesting to pass up. I made it and tried it myself first and was amazed at how good it was so I took it to my family's get together for Christmas and everyone loved it. I only made 1/2 the recipe and put it in an 8x8 dish - also left out the peanuts. It was the easiest and probably the creamiest fudget I ever made - I'm keeping this one!

Key West Chicken

I scaled this down to one serving. I didn't have any soy sauce on hand so I used Worcheshire sauce (one of the main ingredients is soy sauce). I cooked it on my George Foreman Grill - this is a keeper!
