Pasta Carcione
Excellent! I infused the olive oil with minced garlic and basil, substituted plain feta for the goat cheese, and added some shredded basil with the fresh spinach. This is one of our favorite recipes.

Easiest Eggplant
Tasty. To avoid bitterness, I salted the sliced eggplant, let it sit in a colander for an hour, then rinsed & patted dry before coating it with the mayo/breadcrumb mixture.
