Easy Meatloaf

I've made a lot of meatloaf recipes and this actually turned out the best. I added dashes of worcestershire and a few squirts of ketchup to the mix. I sauteed the onion in butter first. I also used 93% lean meat. I had 2.25 lbs of meat so I upped ingredients accordingly but used 1 egg. I hand shaped 2 loaves on a foil lined cookie sheet and for the topping just coated with ketchup. Baked until therm said 160. So simple yet really good. Sadly no leftovers for sandwiches!

Best Big, Fat, Chewy Chocolate Chip Cookie

Threw in a big handful of coconut and used margarine. Used Guittard milk chocolate chips. Would love to throw in walnuts or pecans but kids will not have it. Baked on Reynolds nonstick foil. Came out perfect; crispy outside, chewy inside. My basic choc chip recipe from now on.

Banana Muffins with a Crunch

I changed 3 things. No walnuts because family does not like nuts, and no banana chips because I did not have them. Added a few Guittard milk chocolate chips to each muffin by pushing them in the batter. These were yummy but definitely a dessert item. I like the basic batter though. The melted butter instead of typical vegetable oil makes a lighter tastier muffin. Next time I will try some suggested healthy variations to make it more of a breakfast on the run item.
