My favorite things to cook
I love to bake and unfortunately my hips take the brunt of the abuse. I love trying new foreign dishes and have recently discovered a love for lamb.
My favorite family cooking traditions
My favourite traditions are from watching my mum in the kitchen. She never used a recipe and her West Indian food was always amazing. Red beans and dumplings, rice and black eyed peas, pelau... Mmmmmmmmmm!
My cooking triumphs
The latest was this Valentines Day when I completed 57 large sandwich cookie Valentines for my kids and hubby, each personalised with a frosting name. WHEW!
My cooking tragedies
It's hard to choose between the time I was making a cake for my dad and used chocolate pudding for frosting (I was 12) and the time I roasted my 1st turkey with the giblet bag inside. Discovered, of course, at the table during the carving. Yuck!

Real Italian Calzones
I took some of the others' advice and these were a revelation. Let's see I: -proofed the yeast -pricked the dough (no explosions) -used Italian spice -brushed with olive oil before baking -didn't use cheddar, I mixed fresh parm, ricotta, mozz, pepperoni and threw in an egg to keep it firm I have a family of 5 including a teenager so I doubled the recipe. I got 10 medium sized calzones, one large one and an extra that I filled with apple pie filling. Next time I won't double! We used 3 cheese marinara to dip and my family has found something they seem to like even better than pizza. I echo the thoughts that the crust was fantastic. Thanks for posting!

Overnight Cinnamon Rolls I
Great recipe. You may bave to proof the yeast first, though. I didn't and the dough didn't rise at all after an hour and still looked pretty sad in the morning. I put them in a very, very low oven (about 150 degrees) with a damp cloth over top for about 1/2 hour before I baked them (350 for 15 minutes). They came out perfectly! I prefer these to the ones with the brown sugar/butter topping. These are less rich and you can control the amount of frosting on top. Thanks!

Napoleon's Banana Muffin
My kids and I loved this recipe. It got rid of a lot of yucky old bananas and the booze didn't intoxicate the children. Perfect on 2 counts LOL!
