Pepper-Honey Cedar Plank Salmon

Wow - SOOO good! My husband was worried that I was deviating from our previous "favorite" recipe for preparing salmon, but I think this is now his "new" favorite! Two thumbs up from both of us - and our teenage son, too! :-)

Zucchini Brownies

Reviewed: Sep. 14, 2010
These were great - I did as some other reviewers suggested and substituted whole wheat flour for the white flour. I also left out the walnuts. Next time I think I will leave them unfrosted - my son actually liked them better that way!

Rhubarb Muffins

Reviewed: Sep. 10, 2010
Wow, these were awesome! I followed other reviewer's suggestions and used whole wheat flour in place of the all-purpose flour. I also added more rhubarb (about 1 1/2 cups total). They turned out moist and very flavorful - this ones a keeper!

Red Enchilada Sauce

Reviewed: May 5, 2010
I thought this was really good! I was making a dish that called for a can of enchilada sauce, but I didn't have any so I thought I'd give this a go! The only thing I changed was that I only used a scant cup of water (instead of 1 1/2 cups) because I didn't have that much time to let it sit and simmer. It tasted great!

Barbequed Salmon with Maple-Lemon Glaze

Reviewed: Apr. 11, 2010
This was fantastic! I grilled it on a cedar plank on my gas grill, so I skipped the steps involving cooking spray. Also, before basting the salmon I set aside about half the glaze so we could have some to serve with the fish after it was cooked. The toasted sesame seeds and green onion garnish are a must!

Sturdy Whipped Cream Frosting

Reviewed: Oct. 17, 2009
This was fantastic! It was the perfect combination of creamy and sweet (not too sweet!), and it lived up to its name - I used it to frost some banana bars that I took to work, and it held up all day without refrigeration! Very easy to make, too - pretty much foolproof!

Frosted Banana Bars

Reviewed: Oct. 17, 2009
Wow, these were really really good! I decided to try this to use up some bananas (I didn't feel like making banana bread), and it was fantastic! It made a huge pan, so I took them to work and they pretty much were gone by the end of the day - everyone loved them! The recipe called for using canned cream cheese frosting, but I couldn't bring myself to do it! Instead I frosted them with an outstanding cream cheese frosting recipe from this site (Sturdy Whipped Cream Frosting) - yummy!

Maple Apple Crisp

Reviewed: Aug. 29, 2009
You don't get much better (or easier) than this! I realized about halfway through the process that I didn't have any oats, so I substituted 2 single-serving packages of instant oatmeal (Maple & Brown Sugar flavor). I only used about 1/4 cup of brown sugar since the instant oatmeal was already sweetened. I also cut back the butter to 1/4 cup as other reviewers suggested. I drizzled a little extra syrup on top before putting it into the oven. Awesome!!!

Fresh Cherry Cobbler

Reviewed: Jul. 20, 2009
WOW! All I can say is this was awesome! A friend of mine gave me some sour cherries from her tree, so I went looking for a recipe to use them up. I'm so glad I found this one! I followed the advice of other reviewers and doubled the amount of cherries (but left other quantities the same). I also added some cinnamon and nutmeg to the batter (forgot to add the vanilla as another reviewer suggested, but turned out great without it!). It was the perfect combination of tart and sweet! I've already made it twice, and I'm sure I'll be making it again! Thanks for the fantastic recipe! :-)

Chicken a la Good

Reviewed: Apr. 5, 2009
Really good - and easy! Also, makes a very nice presentation. The only thing was that it came out a bit dry on top - maybe I should have made a sauce (ala Cordon Bleu) - that might have helped. Still, I will definitely make this again!

Lemon Barbeque Meatloaf

Reviewed: Mar. 30, 2009
This was awesome! I did as another reviewer suggested and made mini-meatloaves in a muffin tin. It worked out great because I was short on time and they cooked a lot faster that way (about 30 minutes)! I did not serve with the lemons on top, but the bbq sauce was really good!
