Fat Pete's Fudge
This really caught my eye and turned out wonderful despite all my modifications due to the fact that I did not have candy bars (used another bag of milk chocolate) or marshmallow creme (used a large bag of marshmallows). It is setting now in my fridge and I know it is going to be wonderful!!!

Gourmet Mushroom Risotto
I doubled the wine, did not have shallots so used garlic with the mushrooms and the cooking time was definitely doubled. After I added the mushrooms and butter, I did not add the cheese as it was delicious and so rich, I could not even imagine more...maybe next time!

Caramel Cake II
This cake has become a family and friend favorite. I am rarely able to make the caramel syrup easily, but I always have enough. I also use it to make cupcakes (I get 24 cupcakes per recipe).
