Roasted Butternut Squash and Garlic Lasagna

Oh wow. I was unsure what to think of this recipe as I made it, but it turned out incredible. Made recipe as written, except added a bit more flour and some nutmeg to the sauce. Had everything ready to go, but then realized I had somehow managed to forget to add about a 1/4 of the squash to the sauce. Not wanting to waste, I sprinkled the remaining squash over the top and put some slices of mozz over the top. UNBELIEVABLE. OH, also added crumbled bacon to the two layers (hubby hates anything without meat). Will definitely make again.

Byrdhouse Marinated Tomatoes and Mushrooms

I want to get into this recipe, and have made it twice now, but I don't understand all the amazing reviews. Yes, it's super easy and tasty, but it doesn't blow me away. Perhaps this is because I'm not the biggest fan of raw mushrooms, but I would like to try this as written and then saute.

Blueberry Peach Muffins

These were awesome! Used buttermilk, and increased the amount b/c the dough seemed a little dry and we live at altitude. Just put blobs of the buttery/sugar mixture on top of the muffins before they baked, and they were so, so good. Will absolutely make again.

I had high hopes for these, but they didn't really do it for me. I followed the recipe exactly, but they didn't blow me away at all. Perhaps this is due to my living at altitude, which tends to mess with things in general, but I'll keep looking.

Rosemary Ranch Chicken Kabobs

This was pretty good, but I was not blown away. Followed recipe as directed but reduced salt, and marinated three chicken breasts instead of kababs for about 2 hours. Poured everything into a baking dish and then baked at 425 for about 20 minutes. The chicken was tasty, and we scooped up the extra sauce in the dish to put over rice, which was really good. Easy quick weeknight meal.

The Old Boy's Strawberry Pie

Fabulous, but I did make some changes. I made a cream cheese crust, and then used the oatmeal streusel topping as suggested by another reviewer. For the strawberries, I added juice from a lemon and lemon zest, and then once I put the filling in, I decided more was needed so I added a cup of blueberries just over the top before I added the streusal - baked as directed and the result was an absolute winner!!

Caramelized Onions

These were awesome. I was slightly worried about the reviews talking about them being too molasses-y, but I went for it and followed the recipe as is. So glad I did because these onions were fantastic. Put them on homemade chipotle burgers on fresh onion buns with monterey jack cheese, roasted red peppers (also sauteed in the bacon fat), mayo, lettuce, and tomato. Seriously best homemade burger EVER.

Banana Pancakes with Berries

These were pretty good ... the syrupy berries were a great accompaniment and the pancakes were easy to throw together and on the pan. Added cinnamon to the batter, but followed the recipe perfectly otherwise.

Roasted Red Pepper and Tomato Soup

This was awesome. Except I probably added more tomato and red pepper than called for and I only did 5 cups of broth. Did a final cup of heavy cream at the very end after the puree process and before the roux. DELISH!

Creme Fraiche Chicken

I feel terrible giving this review because I absolutely wanted to love this based on the other reviews, but I found it to be extremely bland and uninspired. I love creme fraiche and had a container left over from another recipe and thought this was a great way to use it. Followed the recipe exactly, except I double the vino and used whole wheat linguine. It wasn't terrible, it was just bland and unexciting. I think perhaps marinating the chicken and getting some herbs in there would spice it up, although I will not make this again.

Kicked Up Mac and Cheese

As I'm eating leftovers for the third day in a row on this one, I have to say, this was delicious. I accidentally doubled the mustard, but it still turned out great, and I did use a whole box of pasta after seeing the reviews and noting how much sauce I had. Delicious. I'm on the mission to create the perfect mac & cheese, so I'll continue experimenting, but this was a perfect start to me and I'm pumped to use some of the ingredients here. Also - I used a combo of panko and italian breadcrumbs for the topping. Delish!
