Whole Grain Waffles
These waffles turned out so light and fluffy! My daughter and I loved them. I cut out the wheat germ (because I didn't have any) and swapped the milk for unsweetened almond milk. I also used grapeseed oil instead of canola and added a bit of honey to the wet mix instead of using sugar. I then made some raspberry syrup by heating up some frozen raspberries on the stove and stirring in a bit of pure maple syrup.

Garbanzo Bean and Quinoa Salad
I found this salad to be quite bland... I could barely taste the spices. I added goat feta and approx. 1 tbsp of red wine vinegar to try rescue the dish, along with more salt/ pepper.

Best Buckwheat Pancakes
Buckwheat is a hard flavour to mask and these pancakes were terrific! My 10 yr old loved them. They are not the regular buttermilk fare, but if you like a healthier pancake, this is a great recipe. I added a dash of vanilla and used a half and half mixture of milk and plain yogurt (as I didn't have buttermilk on hand). I also added blueberries. Light and fluffy!
