Turkey Pot Pie I

I have a better & quicker version if you like the SAME taste but easier! Ingredients: 3 Cups cooked [boiled] chicken-cubed, 1 can cream of potato soup, 1 can cream of celery soup, 1 can VegAll – drained, 1 small can drained mushrooms, ½ tsp thyme, ½ tsp pepper, ½ cup milk, 2 Pillsbury pie crusts. Directions: Cut each pie crust to size of 8 x 8 pan, Put one pie crust in bottom of pan, fill with above ingredients, mixed together., Put second crust on top, make slits in top crust – Bake @ 375 for 35 minutes or until Golden brown. Delicious!

Turkey Potato Casserole

This casserole is fabulous! I made a few changes, I only chopped about 1/4 of a cup of onion instead of a whole one and added mushrooms and 3 cloves of garlic and followed the advice of another poster and sauteed them altogether prior to adding to the dish. I also added about 3/4 of a container of reduced fat sour cream to the potatoes to make them smoother. Next time I will not add the cubes of cheese into the potatoes, there was a bit too much cheese for us and we love cheese. 8oz of shredded cheese is plenty! Lastly, I did not use green beans. I used a 15oz can of veg-all mixed veggies and LOVED it! I think the variety in veggies is better than just green beans. It reminded me of a turkey shepherds pie and the kids loved this one as well!

Grilled Broccoli

This is SOOO yummy!!! I had it at a friends house when she made it for dinner. I wasn't sure by the looks of it if I would like it or not...guess what? Not only did I LOVE it, but the kids loved it too!!! I now have a way to get them to eat broccoli!

Chicken Enchiladas II

This recipie was awesome but I also made a few changes/additions. I doubled the recipe also. I added white onion instead of green. I also added cilantro & 3 cloves of garlic, which really gave this recipe a restaurant flavor! I used a rotisserie chicken too from Target and shredded the chicken meat. I used the entire chicken which was about 4 cups of chicken instead of what the recipe called for. I used a whole 8 oz. container of sour cream. I used two cans of cream of chicken soup. It left plenty to stuff the enchiladas as well as pour over the top. My recipe made about 8 enchiladas and were plenty filling to leave leftovers. The two kids had one and we each had 2. YUMMY! I will definitely make this again.

Chicken Pot Pie III

This is great, I made a slight change to it though. I used A can of VegAll -drained, added 1/2 cup milk to make it more creamy, and 1 small can of mushrooms. My family loves this quick and easy recipe!

Baked Halibut Steaks

I followed this recipe with just a few minor edits. I used Mahi Mahi in place of halibut and it was wonderful! I also baked for 30 mins and used 4 TBS basil, two while cooking zucchini and two when mixing up with tomatoes. This was SO declicious! I also used a tomato basil crumbled feta cheese from Target. Mmmm!

Italian Tomato Pasta Salad

I thought this was excellent! I did alter the recipe a little by adding 1/2 cup of Basil/Pesto salad dressing, red bell peppers, cucumber, and black olives. This was SOOO good though! It goes well with just about any meal!

Alice Chicken

This was excellent! I followed the recipe exactly except I put the mushrooms right on top of the bacon and added the cheese on top of that. It was like the Alice Spring Chicken at the Outback, but made by me!!! This was great with cheesy scallopped potatos and fresh veggies! We also used honey mustard and ranch for dipping.

Banana Pudding Cake

This reminded me of banana bread to be honest. I added whipped chocolate frosting with sprinkles for an after dinner desert and everyone liked it, but it wasn't what I expected.

Burrito Pie

EXCELLENT! This was a hit for my boyfriend. I made it along with Sara's Salsa (also excellent I might add) and it turned out great! We added sour cream, lettuce, tomato, black olives, chives & some of the Sara's Salsa on top of this yummy burrito pie! TRY IT!!!

Sarah's Salsa

This turned out EXCELLENT! I've NEVER made salsa before but I tried this and followed the directions step by step only I added a bit more garlic & only 1/2 of a jalepeno pepper and it was so YUMMY! The fresh cilantro made it that much better! Thank you SO much!!!
