Butternut Squash Fries

Reviewed: Dec. 1, 2009
These were TERRIFIC as written...I tried adding spices other reviewers added, and they were also tasty that way...but they are truly good without olive oil, and with salt only...I used a potato peeler to remove the outer skin before slicing into fries...worked great! Thanks for this healthy way to enjoy fries!

Best Apple Salad

Reviewed: Nov. 27, 2009
This was tasty, and I enjoyed the crunch factor and the variety of flavors! I added celery like a previous reviewer, and kept some of the juice from the kidney beans as per another reviewer; used green onions and yellow bell pepper rather than red onion and green pepper, but it was what I happened to have in the house. This salad seems to be versatile depending on what you have in the fridge...kept the dressing as is...it really popped!! Thank you so much!

Cheesy Baked Cauliflower II

Reviewed: Oct. 22, 2009
Loved this recipe...although I made some changes. I drizzled 2 tbsps olive oil rather than butter and added shredded cheddar to the swiss. I also added garlic powder omitting salt and pepper. I only had one tomato at home...next time I'll be sure to use two. I baked until the cauliflower was slightly browned. It turned out terrific!

Skillet Chicken and Rice

Reviewed: Mar. 13, 2009
I substituted the soup broth with water and bouillon (sorry Campbells!); used 2 cloves garlic vs. garlic powder and brown rice rather than the white...the kids and hubby were practically licking their plates, needless to say there were no leftovers!

Mendi's Favorite Orzo

Reviewed: Nov. 2, 2008
I love mushrooms, but a couple family members don't, so I omitted those, but bet this tastes better WITH. I will make them another time with mushrooms as a side for me and the mushroom lovers in the house. To make up for the olive oil, butter and mushrooms that I omitted, I added a few shakes of garlic powder and a Tastefully Simple season salt and this was a nice side dish. Can't wait to try it with the mushrooms!

Spooky Witches Fingers

Reviewed: Oct. 31, 2008
These cookies look awesome in the presentation! I made them twice, first with the almond extract, and the second time I added 2 1/4 tsp vanilla omitting the almond extract. The omission of the almond made the cookie taste much better. I added 3-4 drops of green food coloring the second batch, and they had just a tinge of green that made them look a little more vile. I shaped them rolling them in my hand without the wax paper, and that worked fine. Make sure you shape the cookies thin, because they spread a bit while cooking and the thinner cookies look more realistic. My batch made about 50 cookies, and were done in about 10 minutes. Enjoy!

This was great...the hubby and kids loved it! I didn't have ricotta so I substituted with cottage cheese. We like dark meat so I used chicken thighs, and I deleted the salt and pepper. This recipe is a keeper! Thanks!

Loved it! I added more carrots and celery, cut the lentils to 1 1/2 cups and added more vinegar. It is even better leftover! Thanks for the great and healthy recipe.

Chuck's Favorite Mac and Cheese

Reviewed: Jan. 15, 2008
My family loves mac and cheese and they would not eat this after I made it. I followed the recipe exactly, and it ended up very dry, and everyone complained especially about the bread crumb topping. I was disappointed after seeing it was a 4.5 star recipe. I will not make this recipe again.

Mock Coconut Pie (Spaghetti Squash Pie)

Reviewed: Dec. 29, 2007
I was a little skeptical about this at first, but I had left over spaghetti squash after making another recipe on this site, and had all the other ingredients on hand. It ended up tasting quite good! It is good either warm or cooled, however we liked it better warm. Thanks for the interesting new recipe!

Spaghetti Squash I

This was great! I added sea salt and ground pepper, upped the feta to 1 cup, added a little more garlic, because we love garlic, and deleted the olives since we are not olive fans, but found this recipe to be wonderful! Addendum: Oh my, my...this tastes better the next day, cold! It still tastes great warmed up....but cold it is amazing!

WOW! These were so wonderful and couldn't have been any easier to make. I followed the recipe exactly, and WOW! I wasn't sure about the combination of spices, so I made a test batch, but WOW...I'll be using the rest of the plums to make this for a delicious dessert to bring to my neighbors party! WOW!

Grandma's Five Cup Salad

Reviewed: Aug. 16, 2007
My mother-in-law gave me this recipe with all the same ingredients, using 1 cup of each so it was truly "5 cup salad." However, the variation I use to make it lower fat and less calories, is replace the sour cream with dannon low-fat peach yogurt. Hubby thinks it tastes better with the yogurt.

Yummy, yummy! This was soooo easy to make and eaten up quite quickly! Cinnamon-sugar mixture could be cut in half, and we left off the raisins and walnuts, as my kids don't like 'em. This recipe is a keeper!!

Cabbage Roll Casserole

Reviewed: Aug. 8, 2007
I changed up a few things, but with the end product using your basic recipe, my family enjoyed it! I sauteed onions and 2 cloves minced garlic while frying up the meat; used cooked brown rice, and added basil and parsley to all when combining everything. Like a previous reviewer, I steamed, rather than baking it for an hour, and it turned out yummy, husband and kids agreed!

Nanny's Goulash

Reviewed: Jun. 29, 2007
This is a keeper. I made two versions, one for me, and one for the family. They don't like mushrooms, and I didn't want the beef...so one version was minus mushrooms, the other minus the beef. The only issue I had with it, was it was a little bland, so we added sea salt at the table. Next time I'll add the sea salt while cooking!
