Truck-Stop Buttermilk Pancakes

YUMMIE!!! This makes a whole lot of pancakes!!! Which was fine with me. I just bag them and put them in the freezer for the kids during the week! In some of the pancakes I added choco chips, blueberries and cinnamon/applesauce mixture! This recipe is definitely a keeper!!! I didn't have any buttermilk...so i just added lemon to some milk and there u go! Thank You!

Italian Meatball Sandwich Casserole

My kids loved it...I thought it wasn't bad...my husband couldn't stand it! So there you have it!! I did toast the bread first before cutting up. I didn't use mayo, instead i used half ricotta/cream cheese mixture with an egg in it! I added lots of cheese to it...so it tasted good, just not quite what i expected. My husband said he'd rather have the sandwich version...men, i tell ya! lol

Good Old Fashioned Pancakes

WOW...this makes a WHOLE lot of pancakes..which is good!! I just placed leftovers in freezer ziploc bags...the girls take them out during the week for a quick breakfast! I only tweaked a little...I used self-rising flour and I added a dash of vanilla. I also alternated choco chips in them in 1 batch, blueberries in the next...then the rest plain for my husband! Keeper..this is way better than boxed pancake mix!!

Bananas 'N' Cream Bundt Cake

WOW...this has to be thee best tasting banana cake by far. I just tweaked a tad...i used 3/4 c. sugar and 1/2 c. brown sugar. I added 1 t. cinnamon to flour mixture and instead of nuts (my kids don't like them), I used 1/2 c. cinnamon chips and 1/2 c. milk choco-chips. Delicious!!! We ate ours last night after dinner while it was still warm with yogurt ice cream....Thanks for such a wonderful and warming recipe!!!

Creamy Peanut Butter Fudge

OMG!!! This had THEE best flavor, texture...yummie!!! OK, the only problem is I could not get it to set 'hard'...so, I'm definitely making again...but letting it boil a tad bit longer than stated...and then letting it cool down a bit before adding the peanut butter and marshmellow! Everyone still ate it, though...I just kept it in the fridge at all times to keep it somewhat 'hard like' otherwise it would turn to mush!

Baked Spaghetti

Pretty good!! I NEVER use jar sauce so I made my own...with lots of onion, mushrooms, garlic, fennel, basil, oregano and italian seasonings. I use 2 c. diced italian tomatoes...I puree one can and leave the other one diced. 1 can tomato paste (with italian seasonings) and 2 c. tomato sauce (with italian seasonings) and a 1/2 c. to 1 c. of water. I let this simmer on the stove for a few hours...with pork medallions (that I saute in olive oil and s/p) in it...mmmm. Then I followed the rest of the recipe as stated. Added lots more cheese, though! Overall, very good!! Was even better the next day when the noodles soaked up all the sauce!!

Apple Cinnamon Cheesecake by EAGLE BRAND®

This was a very good cheesecake! I did tweak it a little bit. For the crust I did 1/2 c. oatmeal, 1/4 c. flour and 1/2 c. cinnamon grahm crackers along with 1/4 c. chopped walnuts. Then I cooked my apples on the stove with cinnamon and brown sugar just a T. of each. Just for a few short minutes to get them tender. I then drained the sauce from them (but kept in a dish). After baking the crust I added the apples to the bottom. For the cheesecake I did add an extra cream cheese as other reviews had mentioned. Then added my extra sauce from the fried apples. I did double the sauce for the topping. I also added caramel for a little something different!! This was by far the best tasting EVER!! Loads of compliments...some people even thought it was a store bought cake..haha Fooled 'em!

Sweet Potato Pie I

Very delish!!! Even people who said they 'didn't like sweet potatoes'...ended up eating it and loving it! Not bad for never making it before. Wish I could've taken a photo! I only did a few alterations...instead of milk, I used evaporated milk. I also used 1/2 c. white sugar and 1/2 c. brown sugar (which was homemade...I use dk. molasses with sugar...yummmm). Thank you!! Such a good alternative to pumpkin pie! God Bless!

Honey Curried Roasted Chicken and Vegetables

I must say this was very delicious!!! I doubled the sauce and added chicken broth 1/2 c. to the sauce. OMG!! so tender and juicy. My kids even ate it! I thought I would have tons of leftovers...boy was I wrong. Thank You for sharing such a tasty and unique recipe!

Apple Crisp II

Have mercy...this is the BEST crisp EVER!! I pretty much followed the recipe to the T...I just added 1/2 c. white sugar, 1/2 c. brown sugar to apples. Along with cinnamon and nutmet and a dash of vanilla! I then doubled the topping. I put a little on the bottom then layered the apples, then finished off with the rest of the topping!! GOOD EATING...then topped it with fresh vanilla ice cream!! You can't beat this!! Thank you so much for sharing such a wonderful recipe.

Chocolate Banana Bread

OMG!! This was very good!! The first time I made as stated in the recipe. Then a week later (yeah its that good!) i made again only with a few alterations. Instead of margarine i used applesauce, I used 1 c. white sugar and 1 c. brown sugar. Then for the 1 c. chocolate chips and 1/2 c. cinnamon chips..WOW and i used reg. sour cream because that was all i had...then i made a cream cheese glaze for the top of it. Note: i baked in a bundt pan for 65-70 minutes. Came out great...EVERYONE loved it! In fact I'm making again for a get together tonight! Thanks a bunch!

Bow Tie Pasta with Sausage and Sweet Peppers

YUMMY! I just tweaked it a little. All I had was onions, no peppers so I sauted the onions and smoked sausage with about 3 cloves of chopped garlic and a little hot sauce, excellent! With the help of other reviews I used a whole can of beef broth. I let it all simmer for awhile and served with bread. My husband loved it and he is very picky!! Thanks

Beef Stroganoff with Noodles

Wasn't what I expected the sauce was very runny :( I even doubled the cornstarch like one of the reviews had mentioned. It actually tasted better the next day after I put the sauce over the noodles and let it sit overnight, like a tweaked beef and noodles. If I make again, I will add garlic and maybe just 4 oz of sour cream and MORE cornstarch to thicken. and 2 cans of beef broth. In fact I thought it needed more salt added to it and I am not a saltaholic! Will try again, it is always better second time around.

Chili Cheese Dip III

Simple recipe to make. I alter the recipe just a little. I used leftover homemade chili from the freezer. I layered the chili first then cut the cream cheeze in chunks. Put in the oven 'til cream cheese started to melt a little. Stirred and then added shredded cheese on top. Placed in the oven for a few more minutes (tastes better in oven) wah-lah it's done. I've made it both ways with canned chili and homemade, if you are in a hurry canned is excellent, also. Homemade just adds a little zing to it. I like mine spicy so I add a little more seasoning to the canned, as to where my chili is already spiced up. Great any way you make it. I like using Scoopable chips.

Grandma's Homemade Italian Sauce and Meatballs

EXCELLENT!!!! Just like my grandma Palaia's recipe. She never used meatballs so that was an added bonus. Very good. I've never had bottled sauce in my life, but I imagine it's bad. Nothing is like homemade sauce that has been simmering for hours!
