Garlic Chicken Fried Chicken

What an easy recipe for fried chicken! I used cutlets so I didnt have to pound out the breasts. Also doubled the garlic, paprika and pepper and buttermilk instead of milk.

The taste was there on this recipe but the tortillas were soggy. I think the next time I try this I would cook the tortillas first then add in the other ingredients.

Meatball Soup

Never heard of this soup before! So glad I tried it. I did add about 30+ meatballs and about 2 to 2 1/2 cups of macaroni to it so it was more like a stew. The next day it was more like chop suey so I just added more water and tomato sauce. Great flavor and a differnt way to use up meatballs!

Rempel Family Meatloaf

What a simple but great recipe. I did use saltine crackers and worcestshire sauce as that was what I had on hand. Definately a good recipe to keep as the ingredients you usually have on hand. Also a good recipe for a meatloaf without onions!

Pineapple Chicken Tenders

This was an easy recipe to make but I was thinking it would have had a stronger flavor of the pineapple taste. I had let the chicken sit for a day in the sauce and thought the flavor was going to be great but next time I make it I will try to double the pineapple juice to see if that helps. Made as kabobs over brown rice.

Spicy Peach-Glazed Pork Chops

The sauce is to die for! Will keep the sauce recipe for many other cuts of pork. Make sure you really sear the chops in the pan to make very crunchy. I used chili powder insted of paste, olive oil and marsala wine. I also had homemade peach preserves that I used in the recipe. Save the sauce to serve on the side as a gravy. The smell will have your family running to the table!

The flavor is definately there in these cookies! Very yummy! The second batch to go on the over came out better being cooked at about 13 minutes in my oven. My dough was very sticky when rolling. Just used a lot of flour on my hands.

Marinated Grilled Shrimp

Out of this world!!! I could eat these every day. There is just enough kick of spice with these shrimp. Would be great on a salad, side dish or as an app. The longer you marinate the better.

Spinach Pasta Salad

A different option for pasta or green salad. I used 6-8oz of flavored feta, 6oz of the black olives diced real small and used a parm olive oil dressing. I didnt think the salad stood up real well the next day, even after adding more dressing. Thought the spinch got soggy.

Oven Roasted Red Potatoes and Asparagus

This could be a 5 star recipe with some changes. Following the recipe exactly the asparagus was overcooked and the rosemary and thyme was overwhelming. Next time I will cut the spices in half, and play with the cooking time. I also think broiling the dish at the end would brown and crisp it up a bit. Has potential!

Chuck's Favorite Mac and Cheese

This is a good mac and cheese recipe but very heavy. I also added 1 cup of milk as suggested by others and I think next time I would add 2+ cups of milk. Not creamy at all. Also added 3 cloves of garlic.

Old Fashioned Onion Rings

Holey Moley!!! I have never tasted a better onion ring! I used the panko bread crumbs like others suggested and it really gave the rings a great crunch. 100% better then any onion ring at any restraunt.

Blackened Salmon Fillets

This seasoning mixture was real good with the salmon. I only used about 1/4 tsp of cayenne seeing I was feeding to little kids. I flavored 2lbs of salmon and only used about half of the seasoning. All of it would have been too much. Also baked in the oven for 30 minutes at 350.

Crustless Spinach Quiche

I have never made a quiche before without heavy cream before and I will never make another one with it!!! This was the best quiche I have ever had. I used 8oz fresh spinach and sauted it with peppers, onions and mushrooms in olive oil. I also used cheddar cheese and some feta that I needed to use up. Also topped with bacon. So many ways to enjoy this crustless quiche!

No Bake Chocolate Oat Bars

These were very rich!! I think next time I would rather these bars be thinner so I will make in a larger pan. Easy to throw together. Make sure you have milk on hand, you will need a big glass!!
