Chess Cake

My mother used to make these all the time. She would press the cake batter into a large cookie sheet to thin out the cake part and then pour the cream cheese topping on top. It lessens the cooking time a bit, but they come out super moist and more like bars or brownies. Great recipe!

Banana Bread II

This is now my favorite banana bread recipe. It's so light and fluffy!! I followed the suggestions of other people by adding cinnamon, nutmeg and vanilla. I used 3 bananas instead of 2 - I always like 3 better. I also added 1/2 c. of buttermilk instead of cream (I was out). It turned out fantastic.! I may add some brown sugar next time. It's not quite as sweet as I like but still super.

Famous Pork Chops

Very good, moist chops. I recommend uncovering the last 10-20 minutes if you want the crust to be a bit crunchy. I also substituted olive oil for the butter and used a bit less. They turned out great!

Butterscotch Drops

Love these!! I usually add a few peanuts in it for an even nuttier, crunchier taste. You can also sub potato strings for cornflakes for a sweet and salty taste. Yummmm!!!

Grilled Orange-and-Bourbon Salmon

Szechuan Spicy Eggplant

I enjoyed the infusion of all the different spices. Next time I will probably leave out the eggplant. I'm just not an eggplant fan. Will probably replace with stir-fry vegetables. Otherwise really good.

Slow Cooker Venison Roast

I used venison steaks for this recipe and they turned out wonderful. There was no "gamey" taste and the meat just fell apart, it was so tender. It was great served over rice. I would definitly make this again.
