Clinton's Special Vegetarian Quiche

I really liked the mixture of cottage cheese and spinach with nutmeg. (Don't worry---the nutmeg isn't dominant if you're hesitating to try it). My changes: added 6 slices of cooked bacon crumbles and used a prepared 8oz. container of crescent roll for the crust.) Loved it!

Spinach and Sun-Dried Tomato Pasta

This recipe is a good base for all the other ingredients I added---including white beans, artichoke hearts, mushrooms, and eggplant. With all of those additions, it made a good main dish. I think I'll add chicken or steak next time. I really liked the suggestion to boil the sun dried tomatoes. I did the same to the eggplant.

Cheesy Polenta

What a yummy polenta! Definately follow the directions and stir every 3-4 minutes to avoid lumps. Also, I used 2% milk and half the butter. Delicious! A definate keeper!

Ten Minute Enchilada Sauce

I was in the midst of making enchilada filling when I realized I didn't have a canned sauce on hand. I found this recipe (the first I've ever made from scratch), and I will make it from now on rather than buying sauce. I followed the recipe with one exception: I added a 15 oz. can of tomato sauce, and it was absolutely easy and delicious!

Blackberry Pie III

My family wanted a quick New Year's Eve pie to ring in 2008, and this one exceeded our expectations. I modified the following: I split the berry quantity to include blackberries and raspberries, added 1 tablespoon corn starch, and omitted the butter. Yummy!

Stuffed Tomato Basil Chicken

This recipe was great and really easy. Instead of wrapping the chicken with bacon strips, I used precooked bacon and sprinkled it on top at the second 15-minute baking. Also, I added sliced mushrooms inside the chicken, and I set my oven to 475 instead of 500.

Cheesy Baked Eggplant

This was a great spin on the usual breaded eggplant dish I make and great use of a whole bag of spinach, too. A few notes: I substituted cottage cheese for ricotta cheese; the recipe was really only enough for about 3-4 people (not 6) if it's the main dish; I egged and breaded the eggplant before putting it in the casserole dish.

Broccoli Rice Casserole

I liked this recipe a lot. I changed three things: 1. I only used cream of mushroom, 2. I cooked the rice in chicken broth, and 3. I used cheddar cheese instead of the cheese called for in the recipe.

Pumpkin Turkey Chili

This was a good twist on my usual chili recipe. I will definately make it again. I did put the entire 15 oz. can of pumpkin in, though, sprinkled cinnamon and cumin---like a previous user, and added a 15 oz. can of kidney beans, undrained.

Basic Hummus

This was the first hummus recipe I've ever made, and it gave me a good starting point. However, I didn't rate it highly because I felt like I had to add so much to the original recipe. Here's what I did: -sautee sesame seeds with garlic -double minced garlic and add 1/2 tsp. powdered garlic -add 1/4 c. lemon juice -add 1/2 c. reserve (after the tsp.) -add 1/2 cup roasted red bell pepper (from a jar)

Scalloped Potatoes II

I thought this recipe was a little bland, and I even followed a few other reviewer suggestions to pep it up, including: (1) I added freshly grated parmesan cheese to each layer, (2) I sprinkled powdered garlic in addition to S&P on each layer. I did like how the potatoes cooked to a nice brown color and were crispy on top, but the bottom potatoes were a bit "muddy" in the flour mixture. If I make this recipe again, I will add more spices and a little less flour.

Teriyaki Chicken

My husband said this was the best teriyaki chicken I've ever made. A few notes: (1) I used about 9 frozen chicken tenders instead of a whole chicken. (2) I didn't marinate; rather, I just covered the tenders with the sauce stirring over and over for about 5 minutes. I cooked for about a half hour. I will definately make this recipe again!

Sour Cream Chocolate Frosting

This recipe is just was I was looking for. It reminds me a lot of an icing my grandmother used to make; although the sour cream gives it a deeper flavor. Like other users, I decreased the sugar to 2 cups and it was perfect. I will definately top my cakes with this frosting in the future.

Cheryl's Spinach Cheesy Pasta Casserole

My family really liked this recipe. I made it when we were all sick; it's great comfort food! I halfed the recipe then followed a lot of previous user comments, including: (1) To the egg mixture, I added a teaspoon of dried basil, a teaspoon of onion powder, and a teaspoon of minced garlic, (2) I added cottage cheese to one of the cheese layers, (3) I used fresh spinach, and (4) I used a quarter of the cheese. I baked it in a 9x9 baking dish. Delicious!

Chocolate Cream Pie I

This is an awesome recipe. I made it for the first time for Thanksgiving in a graham cracker crust. My dad went back for thirds, and he usually only does that with pumpkin pie. I'll definately make this one again; plus, it's super-easy.
