Easy Banana Brownies
Fantastic and easy. I doubled these and made them in a 9x13 pan. I also added some extra chocolate chips to the batter right before baking. They took about 35 minutes in my oven and were chewy and delicious. They don't need frosting, but I was taking them to an event and dressed them up with the banana buttercream icing from this site. They disappeared very quickly!

Roasted Beets 'n' Sweets
I just made this for Thanksgiving dinner and it turned out great! I actually boiled the beets for about 10 minutes before peeling and chopping them and still cooked them for the full hour in the oven. They were nice and tender. I also followed another reviewers suggestion and used a tbsp of brown sugar instead of the white sugar. Otherwise, I didn't stray from the recipe at all. Everyone loved it!

Red Skinned Potato Salad
I'm usually not a potato salad fan, but I do enjoy this recipe and my husband LOVES it. The only change that I make is to add some dijon mustard to the mayo. Great recipe - thanks!
