Tomato Zucchini Casserole
My kids loved it! I did peel teh zucchini so there was no skin and they had no idea what is was and didn't care. This is a great recipe to use those giante zuccinis that show up in the garden.

Mom's Applesauce Pancakes
They are very good. I used TJs multigrain pancake mix and had to add more milk because it was too thick.
