Peanut Butter Muffins

With adjustments based on reading all of the comments - these were very good. I was looking for a PBJ muffin for my kids' lunches. I will try some more just to see about less suagr but these are very good. I used 1.25 cups flour and .75 cups oatmeal instead of 2 cup flour. I used 1 cup of peanut butter. I added 2 T brown sugar and 1 T vanilla with the wet ingredients. I used only one T butter. It made 16 regular sized muffins. I made twleve with jelly in the middle (fill halfway, add jelly, and top off) and I got my kids to eat a jelly they otherwise do not like. The other four I put a banana slice in the middle and a few banana slices on top sprinkled with cinnamon sugar mix.

Good soup. We reduced the butter to half cup - but if I had a bunch more leeks, maybe would use more - hard to say for sure.

Garlic, Spinach, and Chickpea Soup

I had "some" fresh spinach that I added to the onions and garlic step to precook based on certain reviews. I think it was less than half. I did 8 small-medium potatoes and cooked garbanzzo beans from dry. I think my dh will not like, my 4 year old doesn't like but i think it is passable. Tahini taste is a little strong.

Tomato-Cream Sauce for Pasta

This was pretty good. I doubled it and blended one of the cans of tomatoes. Otherwise I followed the recipe pretty closely. I put "some" butter in rather than measuring it and added six garlic cloves - that is the only variant. I doubled it to toss with 5 mild sausages and 17 oz of pasta. Pretty good.

Cinnamon Sugar Tortilla Delight

Mexican Soup

good. spicy - so mostly my dh will eat it. I did n ot have chiles so I subbed a small can of green sauce - dh likes it well. My dad came by and said "Smells good" but he was unable to taste it at that time.

Butter Bean Veggie Soup

Good and could easily be done with any beans - I will likely try garbanzos next time. I found it took a little longer than 10 mins to get the carrot throughly cooked.

Wonderful Waffles

good but not quite as spectacular as suggested by the other reviews. I did not separate the eggs - i have made enough different waffles to know this is a texture primarily thing. I also added 1 t. vanilla nd 1 t. almond per another reviewer and increased the butter and sugar by 50% by same reviewer. Good. smelled sweeter than they were - maybe that's a good thing, but I really did not taste the almond.

Harvest Pumpkin Soup

very easy. Served without sour cream dollop. Suggest eating it first night as sitting overnight did not add anything to it. Pretty good but my dds (ages 2 and 4) did not like it. Particularly good with toast.

Curried Pumpkin Soup

Pretty good. Per one suggestion, I did not add the sugar and used different apples due to what I had on hand. Not very likely to make again simply becuase my dh does not like pureed soups. But, even still he liked the flavor.

Fiesta Fry Pan Dinner

Smelled really good while cooking, but was a little more bland than the smell would have suggested. We omitted cheese due to a milk allergy. Would suggest adding something to spice it up - maybe garlic and fajita seasoning, cumin, something like that. Might try again, but probably not.

Fiesta Fry Pan Dinner

Has potential. My DH said it smelled great cooking, but was surprisingly not as flavorful as it smelled. Would add the basics next time, garlic, S&P, maybe onion powder. Good consistency and flavors, etc. I omitted the cheese due to a dairy intolerance in my little one.

Chinese Roast Chicken with Gravy

Easy. The chicken did not absorp as much flavor as I thought it would. I would pass on the gravy in the future - too salty and wasn't really used much. Of course, maybe with the gravy on the chicken I would not have noticed that the chicken wasn't as flavorful as expected. Maybe putting half the soy between skin and chicken and the rest on the skin?
