For this recipe, place two tbsps of olive oil in shallow pan and broil salmon steak for approx. 20 or until salmon flakes.
While the salmon is broiling (you can also bake on 375 if you prefer), take a medium skillet or frying pan and add olive oil. Saute one diced red onion. Add two garlic cloves also diced. Finally, add fresh diced plum tomatoes or canned diced tomatoes work very well as a substitute. Add the chunks of mangoes and cook an additional five minutes.
Serve with salad of your choice and a lite dressing that won't overpower the flavor of the salmon (suggest a vinaigrette). Delish!
