My cooking tragedies
As a mother of a child with food allergies, sometimes cooking for all of us is difficult. My worst... Trying to bake a wheat, egg, peanut-free birthday cake for my son. The egg replacer is so different from real eggs. I tried 3 cakes. All had great flavor, but were flat as pancakes!

Chicken and Mushroom Chowder
Very good and fairly easy. I didn't use the full amount of oregano. With the "healthy" chicken broth I used, a little salt could be added. We added peas too. I was in a hurry, so I sauteed my chicken with the garlic, onion, and mushrooms; then added the broth, etc. Worked fine. Very filling. I've put this one in my recipe box!

Chicken Tortilla Soup V
Awesome & EASY!!! Super recipe of things already in the pantry. I made just a few as-you-go changes... I sauteed the onions with the chicken, used 1 can corn (drained) rather than frozen and added a can of (rinsed) black beans. Skipped the chili powder & lemon juice. Used picante sauce since that's what I had on hand. And I thickened it slightly with 1/4 cup water & 2 Tbsp cornstarch.

Pavlova Deluxe
This recipe was surprising easy! And my family really enjoyed it. I did use kiwis and strawberries instead of passion fruit.
