About this Cook
Happily married mom to a 10 year old boy. My husband used to do all the cooking until a career change 4 years ago. Now he works long hard days and expects a tasty meal when he gets home. After a bumpy beginning, I am now confident in my cooking and home economics. Sometimes, cooking is just figuring out what to do with what you have on hand.
My favorite things to cook
Dinner for my family.
My favorite family cooking traditions
We eat dinner together every night.
My cooking triumphs
My husband and son rave over my Bread Pudding and Seafood Corn Chowder
My cooking tragedies
There have been too many to count.

Chicken Enchilada Soup III
Very good recipe. Used 10-minute Enchilada Sauce instead of canned. The masa was smooth and creamy and made a very rich soup.
