Macaroni and Tuna Fish Salad
It needed a lot more mayo than called for! I halved the recipe and used at least 1/2 cup. I also added onion powder and lots of pepper. Adding extra pepper really gives a zing!

Cottage Pudding - Upside Down Cake
Heavenly! I made this as a pineapple upside down cake for a party. No one knew who made it and I loved hearing guests tell each other to try the cake because it was so great. The only change I made was that I used 1/2 butter and 1/2 shortening. Truthfully, I don't know if it made a difference. The cake was sweet but not overly sweet in my opinion. Thanks for the recipe! It's a keeper!

Taqueria Style Tacos - Carne Asada
I gave this four stars instead of five because the pureed salsa was not to our liking. It wasn't as fresh tasting as some of the quality store bought salsa's. The first time I made this recipe my family felt it was too salty. I omitted the salt in the marinade the next time around and it was much better. I used flour tortillas and served it with lettuce, tomatoes, sour cream, cheddar cheese, olives and the onion relish. The onion relish was great! Just a hint...add some marinade to the pan while cooking the meat but cook it on high heat for at least one minute to avoid bacterial contamination.
