Thanksgiving 2008 - So Good
About this Cook
I am married with a 17 year old son. He is a musician and keeps us very busy. My husband is a chef/pastry chef, but really loves my cooking - so I guess I'm doing something right. I love to be in the kitchen and make something from scratch. There's something so gratifying about seeing your work come to fruition and sharing it with others. Food is a celebration!
My favorite things to cook
I really enjoy making hearty, homemade soups. There's nothing like a cool evening with a bowl of hot soup and a crusty loaf of bread to warm you from the inside out. I also enjoy baking - I'm working on making every pie on this site!
My cooking triumphs
I finally created a chili recipe to put an end to our family's "Great Chili Debate". We could never agree on our chili for over 7 years. Finally, I gave it one more shot and we are all in agreement! Ah, it's the little things.

Panna Cotta
What a wonderful, sinful dessert! I used 2 cups heavy cream and 1/2 cup half & half because I did not have enough heavy cream on hand. I substituted approximately 1/3 cup granulated Splenda for the sugar, as my husbands parents are diabetic. When the cream and sugar began to boil, I grated some fresh nutmeg and I poured and cooled in champagne glasses (not flutes) with a fresh strawberry cut and fanned across the top. So good!

Kristie's Chicken Spectacular
So quick, easy and tasty! I made this without the cheese and it was awesome! Although, for an added kick, I happened upon French fried jalapenos in the grocery store by the salad toppers (croutons, etc). They are prepared the same way as the onions, so I used half jalapenos and half onions. YUM!!! Just enough kick and incredibly good! (I would give five stars, but I personally feel the cheese is totally unnecessary) :)

Baked Slow Cooker Chicken
So easy! I add one small extra step to the preparation. I mix 1 T softened butter, 1/4 tsp. minced garlic and a sprinkling of basil together and lightly spread under the skin of each breast. Instead of aluminum foil, I cut potatoes in halves or thirds (depending on the size), cut an onion in wedges and sprinkle some baby carrots in the bottom of the slow cooker. Place your chicken on top to cook and you've got a full meal in one pot!
