Ham Salad Spread

I made this today with leftover ham from Christmas dinner. I refrigerated it for a few hours to let the flavors blend. When hubby made himself a couple of sandwiches this evening, he took his first bite and told me it was the best ham salad he'd ever tasted. He LOVED it! He ended up eating 3 sandwiches in one sitting and complimented the entire time. I'll be making this often.

White Chocolate Gorp

Incredibly addictive! I made this as a gift for a coworker's birthday. I made it exactly as recipe describes & put it into a cleaned vintage pot lined with plastic wrap. I piled the mix high into the pot and topped with a beautiful bow. She L-O-V-E-D it, and the mix looked really pretty served this way. It made so much there was some left over for the family -- thankfully, since they were fighting each other for what was left!

Coconut Cream Pie I

A real keeper! The only change I made was to add 1/2 tsp coconut extract to the pudding to give it more coconut taste. It was wonderful after Easter dinner!

Orange Chocolate Cheesecake

Phenonemal cheesecake! It is more dense & rich than the standard cheesecake - which is why we loved it. The only change was that I did not re-bake after putting the sour cream topping on - and it was just fine. It was a lovely end to our Easter dinner!

Cheesecake Topped Brownies

These were amazing. I made a batch to take to our son's "Meet the Coaches" night at school. They were gone in a FLASH. The teens swarmed over them. Since I didn't have chocolate frosting on hand, I used 6 oz semi-sweet chocolate chips and 1/2 cup butter melted together & poured over top. YUMMY!!

Double Layer Chocolate Peanut Butter Pie

I made this for Easter dinner dessert & it was a hit! The only changes I made were to put it in a chocolate graham crust, and I topped it with milk chocolate & peanut butter chips. EXCELLENT! My in-laws especially liked it.

Joy's Prizewinning Trifle

I made this for Easter dinner dessert - and EVERYONE loved it! Just a few changes as others suggested. I used FF Sour Cream & SF instant pudding -- to cut back a bit on fat & calories -- and it was still amazing! Also added blueberries for additional color. Good tip is to dip banana slices in the pineapple juice to preserve freshness. LOVED IT!

Cajun Chicken Pasta

As I was making this, I became apprehensive that it would be as good as I'd hoped. As it turned out, I was very pleasantly surprised. The chicken had great flavor, the sauce was tasty, and the presentation was beautiful. I, too, substituted fat-free half-&-half and thickened with a bit of cornstarch. Hubby r-e-a-l-l-y liked this & ate the leftovers (I had made a double batch) later that night.

Cherry Enchiladas

Cheesy Ham and Hash Brown Casserole

I made this for Christmas morning. It was fabulous. Everyone really liked it. The only change I made was substituting fat-free sour cream for the regular. I intend to make this a regular part of our holiday tradition.

Pumpkin Whoopie Pies

OMG!! These were amazing! I made them for a FBLA fundraiser for my son, and they were the first thing to sell out. Not before hubby kept some for himself. I did use a different filling (1 cup butter, 1 cup marshmallow creme, 2 cups confectioners sugar & 2 tsp vanilla). These are heavenly!

Cinnamon-Roasted Almonds

My teenage son LOVED these! I followed the advice of other reviewers and substituted vanilla for the water. Also since he is diabetic, I used Splenda instead of real sugar. They were delicious and he ate 2 lbs the first evening.

Zucchini Cobbler

I, too, took the advice of other reviewers and substituted oats for half of the flour. Hubby & younger son really liked the "apple cobbler"...then I told them what it really was, and they were surprised. Hubby even told some friends about this and suggested I give them the recipe -- that doesn't happen often.

Jimmbo's Garlic Knots

I don't know what happened. I baked the dough and then drizzled the oil & sprinkled the seasonings and lightly tossed the knots in a large bowl. But the cheese & seasonings lumped together and there was FAR too much garlic. I'll keep looking.....
