Boilermaker Tailgate Chili
Really great chili recipe. I made the following (minor) modifications -- 1) substituted 1 pound ground pork for one of the 2 pounds of ground chuck, and used 1/2 pound andouille sausage and 1/2 pound chorizo in lieu of the italian sausage 2) used 4 cubes of "Not beef" bouillon rather than beef bouillon (can find these at Whole Foods) since I'm not a fan of the various unnatural ingredients found in typical beef bouillon), 3) added a tablespoon of cocoa as some other reviewers suggested for flavor depth, 4) used 3 cans of beans instead of 4 and 5) fried up black forest bacon (also found at Whole Foods) instead of bacon bits.
I made this a day ahead, simmered on the crock pot for a couple hours, and then the next day re-warmed in the crock and simmered for a couple hours before eating. Will definitely make it again!
