This recipe was only ok. I probably would have given it 4 stars, but my husband would probably have only given it 2. We did not have cream cheese with chives, so we used regular cream cheese and cut up some chives in it for the stuffing. We then sauteed more chives with mushrooms and melted in the rest of the cream cheese for the sauce and served with angel hair pasta. There definitely was not enough sauce for the pasta (not necessarily the recipe's fault, we just expected more). We both thought the mushrooms made the dish and it would have been way too much cream cheese without them. The chicken did come out very nice and moist and tender though.

Cajun Ponchartrain Sauce
My husband and I both thought this had a really good flavor. I did add onions and saute with the mushrooms and used fat free half and half instead of cream. I expected this sauce to be thicker, and even doubled as some reviewers suggested, but was a little disappointed in it's thinness. We served with seared tuna steaks and herb pasta. Hubby is requesting again with more shrimp and serving over pasta.

Cheddar Baked Chicken
I sent this recipe to my husband on a whim and he made it for dinner that very night. We served with Parmesan angel hair pasta and both thought it was great. The chicken came out moist and tender and the combination of bread crumbs, cereal, and cheese was just right. Definitely a keeper that will become a regular in our rotation.
