Homemade Bagels

These are absolutely wonderful - and my 10-yr-old and 4-yr-old both agree! I eat bagels most mornings for my on-the-go breakfast; I'm tired of the store-bought, so I tried making my own. Million times easier than I'd feared. I highly recommend following the tips in the reviews by "etirniti" and "Mrs. Tran." (Click View All Reviews and sort reviews by Most Helpful). My dough made 6 normal-sized bagels. I'll be making this again and again!

Winter Squash Rolls

I loved these rolls, as did everyone else who ate them! I used butternut squash, so my rolls had a very nice yellow tint to them. Many previous reviews mentioned the large size of the rolls. I found them to be too large, as well, so I simply made 24 rolls instead of 12. They were the perfect size!

Turtle Pumpkin Pie

This pie was wonderful, but be warned! It's very RICH! I made very few adjustments. I made my own pie crust, which added to the flavor: 1 c. flour, 1/2 c. softened butter, 1/2 c. chopped pecans; blend; press into the pie pan bottom & sides; bake for 15 minutes. Then follow the directions from there. I didn't have 2 boxes of vanilla pudding (& not going back to the store on Thanksgiving!!), so I used 1 box of vanilla & 1 box of chocolate pudding. WOW!!!!! :o) I also used my own whipped cream, with coconut flavoring and about 1/3 c. of coconut flakes mixed in. :o)

Pumpkin Gingerbread

Absolutely Fantastic! We were salivating as it baked! I did make a couple of adjustments: 1. Rather than pumpkin puree, I used a mixture of Acorn Squash & Butternut Squash - 2 cups. 2. I was REALLY in a Ginger mood, so I used 1 tablespoon of Ginger. 3. For reduced sugar, I used 1-1/2 c. of sugar and 3/4 c. Splenda. 4. I was short on eggs, so I only used 2 eggs. Then, I pureed together 1 cup of applesauce (in place of the oil!!!) and 1 banana. You can't really taste the banana for all the other flavors!!! Also, rather than 2 loaf pans, I used 2 square cake pans; they baked in only 50 minutes. I can't wait to share this with my co-workers tomorrow!!!!!!!!!!

Cream Corn Like No Other

I made this dish for a pot-luck dinner at church - there was NOTHING left!!! :o) I only made a few adjustments, due to my own lack of ingredients. I was out of milk, so I used evaporated milk in its place. I figured out too late that I had only 1 bag of frozen corn, so I used 1 bag of corn and 1 bag of frozen peas. Surprising mixture, but wonderful result!!! I also used 1/2 tsp of pepper - I like pepper :o)

Tortilla Surprise

My 4-year-old is a Slow, Picky eater. We are constantly having to make sure she's eating her food because she gets easily sidetracked. Well, I made Tortilla Surprise tonight, and she scarfed it down - and asked for more!!! This was a wonderful dish! I did make a couple of alterations - I did not have chiles, so I left that out. In its place, for the flavor, I added a layer of enchilada sauce on top of the beans. Also, when cooking my ground turkey (healthy option), I added onion powder for an extra kick. Yum!!!

Sausage and Lentils

Wonderful recipe! With the help of previous reviews, this recipe came out wonderfully. Rather than water, I used 3-1/2 cups of chicken brother. I used 3 green bulb onions and sauteed them before adding to the lentils. I also sauteed 3 thinly sliced carrots and added those to lentils early on. For my sausage, I used Andouille sausage (it was all I had - I'd use Kielbassa next time for less spiciness). I cooked it a bit before adding it to the lentils, as well. I added the cumin, salt & pepper as shown, plus some onion powder & 1/4 tsp of curry, although with the spicy sausage, it would've been fine with no curry. Overall, I'm quite pleased with the outcome!

Red, White, and Blueberry Shortcake

This recipe was absolutely wonderful! I made it for a family gathering, and there is nothing left! I did have to make a couple of changes, though. Following the recipe, the batter is way too thick to be called a "smooth batter" or to "pour." It was more like bread dough. I added about 1/2 cup more of milk, and it became much easier to handle and pour. I also had to bake it an extra 10 minutes - the inside was still gooey after more than 15 minutes, like an undercooked biscuit. After all was said and done, though, I loved this recipe. It's sweet, but not TOO sweet; the fruit shines!

Oklahoma Brisket

This was the first brisket I'd ever made, and it came out better than my father-in-law's - he's been making good brisket for years!!! The only real difference was that I didn't have a grill, so I used the oven the wholoe time - and then let it sit in the oven on the warm setting for a few hours, since I made it too early for company!

Libby's® Pumpkin Cranberry Bread

This bread is wonderful!!! I made a few weight watching friendly changes, however. Rather than 3 cups of sugar, I used 1 cup of sugar and 1 cup of Splenda sugar blend (less overwhelming aftertaste); rather than 4 eggs, I used 2 eggs and 1/2 c. Egg Beaters; rather than 1 cup of oil (ouch!), I used 1 cup of unsweetened apple sauce. I added the Points - 6 Points for the original recipe, but only 2 Points with these changes!

Sophie's Zucchini Bread

I LOVE this recipe! It's the best zucchini bread I've made yet! I did make a few health-conscious changes: I added 1 heaping tsp. of nutmeg; I used 1 c. sugar and 1/2 c. Splenda. In place of the oil, I used unsweetened applesauce. In place of the eggs, I used 2 ripe bananas (I pureed the bananas & applesauce together). We decided to make muffins, so everyone could have an edge. It took 30 minutes to bake. To Top it All Off: Whipped Almond Cream! 1-1/2 c. heavy whipping cream, 4 tbsp. sugar, and 1 tsp. Almond extract. Whip about 5 min. until you have stiff peaks - like Cool Whip. We used this instead of icing. Can you say H-E-A-V-E-N???

Ma Ma's Sugar Cookies

This recipe was wonderful! I did make a couple of changes.. I used 1/2 white sugar & 1/2 cup of BROWN sugar, for a little taste kick.. & I added 1 extra tsp vanilla. The cookies turned out great! I rolled them in white sugar & colored sugar crystals for decoration. One thing, tho - I cooked the 1st batch for 8 minutes, & they were JUST undercooked. The 2nd batch cooked 9 minutes and turned out fine!

Roast Chicken with Rosemary

My husband is not the best cook in the kitchen, but he tried this chicken recipe, and it turned out WONDERFULLY!! Needless to say, I was pleasantly shocked! The meat is chockful of flavors that make my mouth water. And as if it weren't already wonderful, it's even better reheated! Kudos to the creator of this recipe!

The Extreme Cherry Cake

I was not impressed by this cake at all. I used it to make cupcakes (solving the not-enough-cherries problem by adding an extra cherry to each cupcake). I think, had I used a box cake mix, with the same cherry idea, I would have been much more pleased. This cake came out very thick and dry - not really a good combination!!! And very bland. I added cream cheese frosting, and that helped a bit - but I wanted cherries with my cream cheese, and this recipe simply did not cut it.

Hash Brown Quiche

"As is," this recipe was *okay.* 1/4 cup of onion, with nothing done to them, was way too much - gave the breakfast an "extreme onion" taste, and we don't like crunchy onions in our breakfast! If I do this again, I'll either opt out on the onions, or saute them first, so they're not so crunchy or overpowering. More egg, too.

Evelyn's Rolled Sugar Cookies

This is NOT a good recipe for cutting cookies. It needed either MUCH more flour or much LESS liquid. Like another reviewer, I'd planned on making cut-out cookies with my daughter (husband threw away my other recipe), but we ended up just scooping it out onto the cookie sheet - it would not hold any shape and it stuck to EVERYthing. I also ended up adding 1 tsp of vanilla for taste.

Banana Walnut Ice Cream

Oh my goodness this is wonderful!!! I'm in heaven! This ice cream was easy & quick to make (quick once it got into the ice cream machine, at least!) - worth the wait for the original mixture to cool off. It's creamy and definitely banana-y. I had to make a couple of adjustments just because of my fridge contents - I only used 7 egg yolks, instead of the 8 called for, and I put in an extra banana. It's GOOD!!

Bella's Rosemary Red Potatoes

I love these potatoes! They were an absolute hit at Thanksgiving AND Christmas! Something cute that I did - I used an apple corer to chop the potatoes... It was quite the topic of discussion!
