Creamy Rice Pudding

Yummy. A bit too sweet with the raisins though. Next time will try it without them. Also used arborio rice and evaporated milk.

Brown Rice and Black Bean Casserole

Very good. Made with about an extra cup of zucchini & an extra cup of shreded carrots, and used spicy jalapeno beans. Next time, I will try making it with chicken breast halves added when I put it in the oven (not boneless) to make it a more hearty meal.

Sauteed Sweet Plantains (Tajaditas Dulces de Platano)

Very yummy! Used black plantains & sauteed in non-stick pan sprayed with Pam. Left out the butter & oil to make them healthier. Brown sugar got a bit carmelized, but it was very tasty.

Building Gingerbread

Easy & fabulous building material. Not terribly tasty though. Did have to microwave briefly to get it to stick together before rolling it out. Used Wilton's meringue powder to make edible royal icing so the kids can eat their creations if they want.

Hot Bacon Dressing

Very tasty. Used the recipe ingredients, but not the same volume. Also used turkey bacon. Had to add a bit of olive oil since the bacon didn't produce any of its own.

Brooke's Best Bombshell Brownies

Followed the recipe, except instead of 1 cup chips, I used 1 cup chopped candy bars & topped with another cup of chopped candy bars. Also baked for an 50 minutes which was probably 5 minutes too long, but with all the chocolate candy, my toothpick was very chocolatey every time I checked it. They were wondful & disappeared fast at the potluck.

Sean's Falafel and Cucumber Sauce

Excellent. I sprayed the flattened nuggets with cooking spray and baked them as another reviewer suggested. They were a bit crumbly this way, but flavor was great & they were guilt-free. Mixing them up was a bit more time consuming than using a box mix though.

BLT Salad

Very easy & tasty. Used light mayo, skim milk, turkey bacon, and homemade croutons. Left out the salt as it wasn't needed. Was able to wisk the dresing, so no need for a blender or food processor.

Hot and Sour Chinese Eggplant

This was so yummy! I left out the chile pepper since I didn't have any & used regular eggplant. Served it with rice and citrus glazed tilapia. Very tasty. Next time I will add more heat.

Tantalizing Turkey and Blue Cheese Meatballs

I loved these, however my hubby who is not a bleu cheese fan thought they tasted a little off. Next time, I will make them with feta to appease him. Used only 1 jalapeno, no olive oil, & 1 whole egg, and only a dash of chili powder, otherwise followed the recipe. Baked on a foil lined non-stick sprayed cookie sheet. Served with brown rice and sauteed mushrooms in a wine & turkey broth sauce. So yummy! They were not at all spicey, so next time may add both jalapenos & if the kids don't like them, then there are more for the adults!

Mexican Lasagna

Very good. Added a can of chili since I did not have any refried beans. Also sliced up a few corn tortillas and sprinkled on top for the last 10 minutes of baking.

Green Beans with Cherry Tomatoes

These are the best green beans! I love the sweet buttery tomatoes with the beans. No more leftovers when we have these. Could cut down on the butter to make them healthier as I always have extra sauce after all the beans are gone, probably due to the tomatoes losing their juice.
