Chocolate Chip Banana Muffins

I adjusted the recipe a bit to make them healthier. I removed 1/4 cup flour and added 1/8 cup flax seed meal & 1/8 cup wheat germ. I also substuted unsweetened applesauce for half of the oil. I ran out of chocolate chunks, so substituted peacans for some of them. They are so moist and light. LOVE this recipe!

Extra-Easy Spinach Lasagna

Very good. I added an egg to the ricotta mixture as well as extra oregano, basil & marjoram. I also doubled the mozzarella both in the ricotta and on top of the lasagna. My son who normally doesn't like spinach or ricotta cheese ate the combination in this dish without any complaints.

Penne with Chicken and Asparagus

Yummy & light. I added mushrooms & used turkey instead of chicken. I also didn't put enough salt in while cooking so it was bland until I added extra at the end along with extra parmesan.

Asian Salmon

Very tasty. I made the marinade as written except only made 1 pound of salmon (skinless) & I added 1 T fresh grated ginger. I baked it for 15 min & then broiled it for 5 min, flipped it & broiled another 3-4 min. It was wonderful!

Holiday Shortbread Cookies

I'll give it a 3 star, but I found out that I do not like traditional shortbread. It was bland and boring next to all the other Christmas cookies, even when I drizzled it with chocolate and sprinkled it with holly berry sprinkles...

House Fried Rice

This was wonderful. I used cold rice and added a few dashes of fish sauce and a sprinkling of sugar. It was kind of a cross between this recipe and the fried rice with cilantro recipe. Yummy!

Best Cream Of Broccoli Soup

I added a carrot & 1/4 head of califlower, plus a little cheese (about 1/2 cup total cheddar & cream cheese). I also pureed about 1/3 of the soup & mashed the rest. It was wonderful!!!

Sugar Cookie Frosting

I substituted orange extract for vanilla and lemon juice for milk & the frosting is fantastic! Otherwise I followed the recipe and just added lemon juice until I got the right consistency. The cookies I made are not so great but the frosting can hide anything.

Black Bean and Corn Quesadillas

These are great! I skipped the red pepper & butter. The tortillas do not stick to a non-stick pan since they are made with lard. I also added cream cheese. My family loved them.

Peanut Beef Stir-Fry

Broccoli Rice Casserole

This was a quick and easy dinner. I cooked regular rice and placed it in a 13 x 9 pan. Then I topped it with 16 oz frozen brocoli, 2 cups cooked leftover turkey meat, 2 cups shreaded cheese, sauteed onion, celery, 2 cans cream of mushroom soup (didn't have cream of chicken or american cheese) & homemade bread crumbs. I just layered it all in the pan and baked it til heated through. Thanks for a great recipe!

Swiss Chicken

This was really good with a few alterations. I used cooking sherry instead of water, added an extra can of cream of mushroom soup, & used home-made bread crumbs seasoned with oregano, basil & garlic. It was excellent served over egg noodles. Had the leftovers tonight & it was still very tasty. Will definitely make this again.

Cream of Mushroom Soup I

If I could give this soup 10 stars, I would. The only thing I changed is that I didn't have sherry, so I substituted marsala wine. This soup has forever ruined canned cream of mushroom soup (even the gourmet variety)!!! Thanks for a fabulous dinner!
