Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Reviewed: Jun. 16, 2009
I LOVE this recipe!!! I took others advice and added tsp allspice, made mine with all applesauce to replace the oil,Splenda Brown Sugar blend, and with egg whites. I made mine into a banana bread and omitted the strawberries another reviewer said she cooked hers for 50 minutes be careful with the temp/time mine were only in about 40 minutes and I almost burnt it. SOOOOO GOOOOOD! Thanx for sharing such a great recipe.

Hasty Chocolate Pudding

Reviewed: May 20, 2009
Mmm mmm GOOD!!! This is actually quicker than instant in my opinion as you don't have to get out the ol hand mixer or injure your arm mixing away by hand. I used Splenda and skim milk and it turned out great. As others have said this is a dark chocolate flavor if your looking for sweet than this probably isn't the recipe for you. Thanx so much the recipe.

I really hate giving bad reviews because someone out there thought it is a wonderful recipe and wanted to share it with the world. But this recipe is very very bland. I ended up adding bottled stir fry sauce to try and save it. Thanx for the recipe but I guess this dish just isn't for me.

Mock Coconut Pie (Spaghetti Squash Pie)

Reviewed: Apr. 29, 2009
I also don't really understand why this is called "mock coconut pie" there is no coconut flavor in the ingredients. That being said I omitted the lemon and vanilla and added approx 3 TBSP of coconut flavor Da Vinci Gourmet syrup, made mine with 1/2 cup Splenda and used 2 egg whites and one whole egg. I skipped the crust and just put it in a 2qt casserole dish and baked for 40 minutes and then turned my broiler on high for an extra 5 minutes and it came out very good.Kinda like a custard/pudding. Thanx for such a great recipe idea. So creative!!!

Chocolate Banana Bread Pudding

Reviewed: Apr. 27, 2009
Okay so this recipe deserves five stars as I barely followed the recipe and it still turned out good. Firstly I barely ever make a dessert or any dish for that matter without trying to reduce the fat. I used skim milk, egg whites, 1/3 cup Splenda, added cinnamon, and used homemade white bread that was starting to turn stale. I threw mine in a 2qt baking dish at 350 for about 45-50 minutes and it came out moist and delish. To tell you the truth I never wanted this to turn out as I'm home alone with freshly baked goods. I LOVE banana anything!! I'm sure th original recipe would be AWESOME. Although I unfortunatley have to work hard to keep my figure lol. Thanx for the recipe.

Canadian Molasses Cookies

Reviewed: Apr. 26, 2009
I love these cookies as they have no butter Yay!! I was skeptical that these would turn out as I used brown sugar splenda but they turned out awesome. I will warn you to not overbake these. I pulled mine out as soon as they were just starting to look cooked they appeared they may need to cook longer but I let them cool on the cookie sheet and they were chewy and moist. Next time I'm going to try candied ginger and will dip them in melted chocolate.

Sugar Spiced Almonds

Reviewed: Apr. 26, 2009
My hubby loves spicy foods and me not so much. I made this recipe for him and I am very surprised how much I actually enjoy these. They are very very good and I know I will be making these very often for him. They are a healthy grab and go snack. The only thing I did different was I added one egg white as I ended up with a sugar paste so I needed something to water it down. Next time I will try to make them with no oil and just egg whites. I also decreased the ceyenne pepper as I thought it was a lot and they ae plenty spicy. This is a keeper in my recipe box. Thanx for sharing.

Italian Sausage Soup

Reviewed: Apr. 23, 2009
I really am not a fan of broth-based sopups although I will prepare them and make them but this soup had completely changed my mind. It blows my mind how simple amd delicious it is. I used "Johnson's mild Italian sausage" and oh so yummy!!! I also upped the garlic added a sweet onion, increased the broth to about 2 L, doubled the tomatoes and also added about 1/2 TBSP of italian spices. My hubby thought it was great also. With my changes this soup will feed many many people I have tons of leftovers in the fridge and also froze some. I think I'm going to try adding some kind of starch next time. Thanx for sharing such an amazing recipe!!

Chicken Stir-Fry

Reviewed: Apr. 21, 2009
So after reading many many reviews I took most everyone's advice and doubled the soya sauce and spices. Be sure when you add your chicken to the bag the chicken is not too wet as mine was and formed a paste once the cornstarch was added... then burnt to the bottom of the pan when I fryed the chicken. I felt that the sauce was much to runny and ended up making more sauce in a pot on my stove and thickened it with chicken stock and cornstarch. Then I added the thinkened sauce to the chicken and veggies. It turned out very good although the original recipe would be very very bland. I will make this again but I will marinade the chicken then make the extra sauce and add it all together. This is pretty hard to mess up believe me I tried!!

Sarah's Applesauce

As far as applesauce goes this is a good recipe. I made mine in the slow cooker on high for 4 hours. I also used Splenda to sweeten it although next time I would decrease the sweetner. Thanx

Funky Enchilada Casserole

Reviewed: Apr. 18, 2009
I took one of the other reviewers advice and skipped the oven and corn tortillas. I halfed the recipe and made it in the frying pan but skipped the oil and used cooking spray. Then I spooned the hot mixture into mini pita pockets and sprinkled with a little shredded cheddar chees and served with FFsour cream for dipping. This was a very delicious lunch and I have plenty of leftovers for supper or tomorrow evening. I also love thay this dish is full of great stuff like beans and veggies. I will make this again without a doubt but I don't think I will try it according to the recipe. As always thanx for sharing.

Whole Wheat and Honey Pizza Dough

Reviewed: Apr. 16, 2009
I cannot even begin to tell you all how much I LOVE this dough. I use mine to make big pizza's, personal pizzas, and even calzones. For those of you having trouble with it if your yeast dosn't proof properly then there's no sense in continuing. The water needs to be warm at least 45 but not too warm. If it proofs properly it will be thick and creamy on top. If you don't see this then start over. This is my staple pizza dough recipe and is so chewy and healthy. Thanks a million for sharing.

Playgroup Granola Bars

Reviewed: Apr. 16, 2009
I'm kinda having a difficult time rating this recipe as I changes so many things. Álthough I'm almost 100% sure that the origianl would be PERFECT! Seeing as I wanted to cut calories I used Splenda brown sugar and I used applesauce instead of oil they ended up being very sweet but not that I couldn't eat them I threw in some cherry craisons and chopped whole almonds. Cooking them for 30 min would be waaay to much though I did about 17 min and they came out chewy and moist. They were not "granola bar"like more of a cookie but then again I changed so many thing. I would make again but I try ading banana's and cutting down on the sugar. Thanx for sharing.
