Fried Chicken Chunks (Chicharrones De Pollo) Dominican

My family gobbled this up - including my boyfriend who is Dominican and normally hates fried chicken. I followed the recipe exactly (except I was out of adobo so used garlic salt instead). Next time I'll probably add some seasoning to the breading and marinate the chicken for longer.

Cuban Ropa Vieja

Thank you! Thank you! This is awesome! I can't wait to make this recipe for my Dominican mother-in-law who pities her son for living with someone who can't cook anything like what he grew up with. He loved the dish and I know she will too. I just changed a couple things. I rubbed the flank steak with garlic salt before browning, added extra chopped garlic, substituted a beef bouillon cube with vegetable broth instead of the beef broth, and added green olives. I served it with rice, beans, and roasted sweet potatoes. It was absolutely fantastic!

Cherry Cobbler II

I recently made this for a large gathering and while I didn't have any, it earned rave reviews from everyone there. Drawing from other reviews, I used 1/4 C of butter, and made it in an 8x8 pan. I made four, two with a can and a half of drained pie blackberries in each and two with a can and a half of drained pie cherries in each. I also sprinkled sugar on top while baking. Thanks for such an easy recipe!

Spinach and Pasta Shells

Yum!! Per the other reviewers' suggestions, I used fresh spinach (and entire bag, but could have used more), and added a can of diced tomatoes with onions and green peppers. It was great, with just the right amount of zing. Fresh parmesan added a great touch to the dish. It was so easy, too!

Potato Leek Soup I

This soup is great! It is *really* thick, though. I used only 4 lbs of potatoes and still had something close to mashed potatoes until I added more wine (for a total of 1 C). The wine was a nice touch, though, and we ate it with parmesan and bacon bits. Even my boyfriend - who hates soup - raved about it.

Mexican Lasagna

This was fabulous, but I tweaked it a lot (both on purpose and on accident). First, I finely shredded up leftover pork roast and reheated it with taco seasonings and a can of diced tomatoes with green chiles. In an 8x8 glass pan I layered corn tortillas, meat mixture, cheese, more tortillas, refried beans, more meat, and cheese. (I forgot the salsa in that step) I served it with diced olives on top, and with sour cream and salsa on the side. It got rave reviews all around and will be great tomorrow for lunch. I guess it was because I forgot the salsa, but it wasn't soggy at all. Be sure to spray the pan!

Spinach Chick Pea Curry

This is a favorite in our house. I've made it with all kinds of vegetables - carrots, cauliflower, broccoli, potatoes, sweet potatoes, peppers, etc. - and with varying amounts of curry paste and it always comes out delicious. Like other reviews recommend, I always bake the tofu first and much prefer the texture that way.
