Barlow's Blackened Catfish
We really enjoyed this recipe. Followed the directions as written, and found it a little too salty. Also, did not add the full amount of italian dressing - just enough to coat the fillets. Other reviewers were right...the peppery smoke that comes off of these when blackening is enough to give you a coughing fit, so ventilate well! Will definitely make this again.

Barbeque Pork Two Ways
Made this the slow cooker method. I loved how tender the meat came out...and definitely loved how easy it was. The sauce was just all right...not really the type of bbq sauce I llike. Will make again, but will make some changes to the sauce.

Baingan Bharta (Eggplant Curry)
Pretty good. I made it as a main dish, and it wasn't really enough to fill all of us (served with rice). I cooked exactly as directed, and would make some changes if I make it again. Cooking it on high for 10 minutes caused the yogurt to burn on the pan. Overall, it was pretty good, but I would make some changes next time.
