Fresh Semolina and Egg Pasta
I liked the taste of this pasta, but it was DRY!! I have made fresh pasta before, so I don't think the dryness was due to inexperience or poor measuring, etc. Needed at least one more egg, more olive oil, and water to make is pliable. It was a bear to get through our pasta machine because it was so dry. I am trying it again today, with additional liquid to see if that helps.

Tempeh Kabobs with Moroccan Couscous
This was good, but not great. I was thinking that the whole dish would have a Moroccan taste, but it definitely does not! I would use way less oil next time and the veggies could be easily swapped out for whatever is on hand. I broiled the kabobs for about 10 minutes total, turning every few minutes. I don't feel like the eggplant cooked enough with this method, but everything else would have been burnt or overdone if I had cooked it much longer.

Greek Style Potatoes
Very good potatoes. I cooked at higher temperature for a shorter time.
