Jamaican Burgers
Edit: I am editing my review and giving it 5 stars because I did not read the instructions properly the first time I made these. You do not need egg - mashing the mixture holds it together great. Such a wonderful recipe, thank you! Great recipe! I would've given it 5 stars, but it was really lacking a main ingredient as others have stated: egg. We used 2 and the burgers held together great, even on our grill. Otherwise it would've fallen completely apart. Topped with lettuce, tomato and slices of avocado, awesome!

Basic Microwave Risotto
I have to say, I was pretty surprised at how well this risotto came out! I love risotto and usually do the long routine of stirring and adding liquid...what a nice switch for a night where I didn't have the energy! I followed another review and added a dash of fat free half & half at the end, yummy. I also added sliced baby portabella mushrooms with the onions/garlic. The timing for the microwave was perfect.

Chicken Marsala
The only reason I gave it 4 stars is because I doctored it a little bit. I'm sure the recipe is good as is, but everyone has their own personal taste :) I began with cooking 2 pieces of chopped center-cut bacon, then removed the bacon and added just about 1 T olive oil to the pan. I followed the rest of the recipe, only adding fresh garlic, chopped vidalia onion with the mushrooms (a must! it was soooo good), and then to just thicken the sauce a bit at the end I put a splash of fat free half & half. Then served with the bacon mixed in. (I would make this recipe without bacon too, but it added a nice flavor if you happen to have it on hand) Yummy!
