Creamy Chicken and Wild Rice Soup

Excellent. Very rich and delicious. I used garlic and herb flavored wild rice mix and it was amazing. Add some frozen soup vegetables to make it more filling.

Pork Chops Stuffed with Smoked Gouda and Bacon

These were excellent. Gouda is the perfect cheese because it doesn't ooze when it melts like cheddar does. Stays inside and adds the perfect flavor to pork. Really impressed everyone with this one!

Southern Ham and Brown Beans

Love this recipe. Followed it to the letter except I used the alternative of chopped ham instead of a ham hock, and I added a bit of ham boullion to make up for it. YUUUMMMY! Also did the 6 hours. Flavorful and inexpensive.

Absolutely Ultimate Potato Soup

I made this on a night my father happened to be over for dinner. Within days, my father and sisters and mother all seperately asked me for the recipe. Apparently word travels fast! I used good ole 2% instead of cream. I pureed all the vegetables and half the potatoes to hide the vegetables from the picky eaters. This was a HIT! Thanks so much

Chocolate Cherry Drops

I tripled this recipe. These are YUMMY cookies. However, when I tripled it, I needed to add an entire cup of flour just so the dough would hold together. So it seems the ratios do not work in large batches. But these were a HIT with the entire family.

Scalloped Cheese Potatoes

Delicious and great for a cool night. I followed advice of others, omitting butter and adding chopped ham to the potato/soup mix. As there are only 2 of us, I cut the recipe down to 2 lbs. potatoes and 1 can of soup. However, it still took the entire 2C cheddar to cover the potatoes. Using a 9x13 pan means that even if you cut this recipe down, it'll still need all 2C cheese. Next time will make in a 9x9 and see if I can halve the cheese.

Taco Seasoning I

Curried Rice Pilaf

LOVED THIS! The leftovers are my lunch today. I omitted the raisins (didn't have any) and used onion powder instead of green onions (didn't have any of these also). I served this with some crab cakes and it was a perfect side. I'll be making this alot more often!

Refried Beans Without the Refry

Andrea's Pasta Fagioli

Delicious! I made a bulk batch of this to freeze in individual meal sized portions, and I found that adding the ditalini makes it bulk up and absorb all the broth. So if you plan to use this OAMC, or as a quick fix lunch, leave the ditalini out, freeze the soup without it, reheat, and then either add cooked ditalini or add a bit of extra water and raw ditalini. This is THE fagioli recipe. To make it a meal, add 1lb. wedding soup meatballs, and 1 lb. cooked bulk sausage. Yummy!
