Spinach Enchiladas Verde
the only change i made to this was to layer it instead of rolling it, mostly because i am lazy... it turned out amazing and my husband who is a big meat eater asked me to put it into the permanent rotation!

Sarah's Applesauce
this was great and I will never buy store bought applesauce again. I will double the apples next time but i think i will keep the cinnamon and sugar the same since it was a little sweet for my tastes

Easy Cheap and Yummy Casserole
We liked this okay with the beans but i think it would be better with chili in the bottom but its a great idea and it was quick and easy
