I love baking goodies and trying new things. I love cooking anything from Southern cuisine to Asian, to Mexican. It's ALL good! My kids make great guinea pigs!

Slow Cooker Carnitas
No leftovers! All 7 kids and husband really enjoyed this and gave plenty of compliments and thank you's. The changes I made were using water instead of chicken broth, no bay leaves, no coriander and doubled the spices except the cinnamon. I fixed some mexican rice, corn, black beans and tortillas to go with it. Delicioso!

Basil Cream Chicken
The chicken alone without sauce was outstanding. It was moist inside and crispy outside. The kids loved it. I doubled the sauce since I was cooking for husband and I plus 7 kids. My kids didn't eat much of the sauce, so I had lots leftover. The only changes I made to the recipe were adding a little salt and garlic powder to the breadcrumbs and using seeded tomato instead of the pimento. The sauce was very rich and very yummy! Thanks for the great recipe.

Easy Microwave Maple Fudge
I'm giving this recipe 3 stars for being very easy and quick. I used real butter and maple flavoring since there wasn't any maple extract at the store. My fudge turned out very grainy and dry and crumbly, probably from mixing too much, but even though I had sifted the powdered sugar, I had a hard time getting all the lumps dissolved. The fudge was also VERY sweet, even too sweet for some of my sweet tooth kids, but we still ate the whole batch. I might make it again, trying a little less sugar next time. Thanks
