Salsa Chicken Rice Casserole
I mixed everything together and then put it in the casserole dish. I wanted a little more flavor, so I cooked the chicken breasts in salted water and used rice with Mexican seasoning (garlic powder, onion powder, chili powder, and chicken boullion powder) and added about 1 TBSP chili powder to the casserole. I left out the onion and used only cheddar cheese. I added a few handfuls of coarsely crushed tortilla chips to give the casserole a little more structure. I stuck the casserole in the microwave for about 6 minutes and served with refried beans. My husband and kids liked it, so it's a keeper. Thanks for sharing!
