Pork Stew in Green Salsa (Guisado de Puerco con Tomatillos)

Fantastic! The only change I made was to add an extra cup of water in the beginning. I let this simmer for about 2 hours and served it over white rice. Will defiantly make again!

Quick and easy to put together. I did add the seeds from one split vanilla bean for a little added touch. My kids loved these. I served them with two dipping sauces, dark chocolate and homemade dulce de leche. Big hit here in the Bebout house!!

Coconut Cream Cake I

This was fantastic! I made cupcakes instead of a cake. I also used the cram of coconut not coconut milk. Combined with the condensed milk it made a very thick syrup and was a little difficult to pour over the cupcakes. I'm sure it would be easier and less messy if I'd make a cake instead. The only change I made was to add about a teaspoon of coconut extract to the whipped cream icing. I also used a combination of toasted and untoasted coconut for the topping. They are wonderfully light and refreshing. This is a definite keeper!!

Foolproof Rib Roast

I too was very skeptical about this recipe. I hated to think that I could ruin such a beautiful and expensive piece of meat! After telling my husband 800 times NOT to open the oven, I put my roast in the oven. I followed the directions to a T and my roast was perfectly cooked for our family, medium on the outside, medium rare closer to the bone and rare in the center. I must stress that bringing the roast to room temp and not peeking is the key to this recipes success. While my roast was resting I added some Merlot and beef stock to the pan drippings and simmered them for a nice, rich jus. Just seasoned it with a touch of fresh black pepper and sea salt. I will use this recipe again! Thanks!!

Rainbow Clown Cake

I LOVE this recipe!! I've made several batches and have tried several different color schemes. I did bright neon colors for a retro birthday party and Halloween colors for my sons party. I have also used a yellow cake mix and it turned out just as good. I will be making these often!!

Special Buttercream Frosting

I've used this recipe for several batches of cupcakes. The first time I made it exactly per the recipe. The next few times I added a teaspoon of Wilton butter flavoring and a teaspoon of almond extract. It was great both ways! I tinted my icings several colors and used the bag striping technique to decorate my cupcakes. Great every time!

Coconut Ice Cream

Wonderful! You must drain the zucchini! I just put the shredded zucchini in several paper towels or a clean kitchen towel and squeeze the excess moisture out. My super picky teenager ate several of these! Thanks!!

Pecan Pie IV

Very basic pecan pie recipe. I made this for my ill grandmother and she loved it. I made it one time with the store bought crust and made my own crust another time. Results were excellent both times. Mine did take about 25 minutes longer to cook, so watch the oven time closely. Thanks!

Kalua Pig in a Slow Cooker

Very easy to prep this pig! I didn't have the Hawaiian salt so I subbed French gray salt. Put this on around 9pm the night before and cooked it until 6 the next evening. Excellent with or without bbq sauce. I made Pao Doce bread to go with this. Will make again!! Thanks for a great recipe!
