Potato Chips
Like everyone else, I was totally surprised that the potatoes would crisp in the microwave. Took about 10 mins in my microwave. I didn't have parchment, so used wax paper and had trouble removing some of the potatoes from the paper. Will try parchment next time. Tasty, quick, easy and different! Thanks for sharing.

Crumb-Coated Chicken Thighs
This recipes is fabulous as is! A family favorite in our house that pleases even my picky 9 year old. In fact, I'm making it tonight but with chicken breasts instead. Next time, I'm thinking of trying it without the bread crumbs, and using it as a dry rub on grilled chicken. At any rate, you can't go wrong with this recipe. Update...tried it on the chicken breasts, while it was good, the flavor was a bit strong. Thighs seem to stand up better to the spices in the coating. Did also try it as a rub on grilled thighs, less the bread crumbs and it was great!! Tossed the thighs in olive oil before applying the rub. My family loved it.

Seasoned Fan Potatoes
I've made a very similar recipe using red new potatoes tossed with olive oil, garlic and rosemary so was excited to try this. They were very good, although my potatoes could have cooked longer - next time I'll try nuking them first. One slight change I made was to add 1T of extra virgin olive oil to the butter, along with the salt and herbs which I then drizzled over the potatoes. A tip...put a chopstick on either side of the potato while slicing them to avoid slicing them all the way through. Works great!
